A few months ago, my very good friend Beth treated me to lunch at Panera. I got Panera Bread’s Mediterranean Grain Bowl and oh my gosh. It was amazing. All I could think was that Pete would love it.

So a couple days later, I picked up everything I needed to recreate the Mediterranean Grain Bowl for Pete.

He loves it.

Every time I make it, he tells me its his second favorite thing that I make (his first is Yakimeshi).

Mediterranean Grain Bowl

What You’ll Need:

  • 1.5 cups brown rice and quinoa mix
  • 6 chicken breast tenderloins
  • Garlic
  • Olive oil
  • Parsley
  • Lemon juice
  • 1 cucumber
  • 1 Roma tomato
  • 1/2 can kalamata olives
  • 4oz. feta cheese
  • 1/2 cup hummus
  • 1 avocado

What You’ll Do:

Make the brown rice and quinoa mix in the rice cooker. If you don’t have a rice cooker, you can make it on the stove. But I prefer the simplicity of the rice cooker.

While that’s cooking, chop the chicken into chunks. Sprinkle it with olive oil, parsley, and lemon juice. Cook in a pan.

Dice the cucumber, tomato, olives, and Feta. Set aside.

Cut open the avocado and mash in a bowl with a drizzle of lemon juice.

When the rice mixture is done, it’s time to assemble.

Put about 3/4 cup of the rice mixture on the bottom of a bowl. Sprinkle with lemon juice and stir.

Top with 1/3 of the chicken, cucumber, tomato, olives, and feta.

Add a small scoop of hummus and mashed avocado.

This recipe should serve three equally sized bowls, for dinner portions, or four lunch portions.

If you need to stretch it a little further than that, just buy some extra vegetables and add a little more to each bowl.
