Easy Hamburger Buns Recipe
After showing you how to make your own bread flour and proof dough in the Instant Pot it is time to actually bake something with this bread flour.
That is why we are making hamburger buns that also go great with a hot dog (just shape them long instead of round), a fried egg, or something sweet.
If you have that multi cooker or Instant Pot, get on the kitchen counter and proof your dough in it.
If you do not own one no worries just proof your dough in a bowl and you will be just fine.
Hamburger Bun Ingredients
To make this hamburger buns recipe you need a number of ingredients. Put them on your grocery shopping list.
Have the following ready when you start:
- Lukewarm water
- Butter, at room temperature
- Egg
- Homemade bread flour or all-purpose flour
- Sugar
- Instant yeast
- Salt
- Sesame seeds (optional)
Depending on whether you are baking in a warm or humid environment you take ¾ of a cup of water. If you are in a cooler climate or in winter you use 1 cup of water.
Use something in between ¾ cup and 1 cup when you are in neither a cool nor a warm environment.
Baking is about just trying if the dough is too dry add a bit more water if the dough is too sticky add more flour.
How To Make Hamburger Buns
Take a bowl, stand mixer, or a food processor and add all the ingredients to the dough. Start with the flour, sugar, salt, yeast, soft butter, and egg.
Mix and knead all of the dough into a smooth dough. By hand, this will take about 10 minutes, in the food processor or stand mixer for about 3 to 5 minutes.
Instant Pot Dough Proofing
If you have an Instant Pot, take a piece of parchment paper and grease it with cooking spray or oil and put the dough on top.
Put the dough in the Instant Pot, put the lid on top (do not close) and press the YOGURT Button. Set a timer to 30 minutes.
Regular Dough Proofing
If you do not own an Instant Pot cover the dough and let it rise for 1 hour, or until it’s nearly doubled in size.
Then gently deflate the dough, and divide the dough into 8 pieces. I use a scale to weigh every piece of dough so you get the same-sized buns.
Shape each piece into a round ball and flatten it to about 3″ across.
Place the buns on a parchment-lined baking sheet (you can reuse the parchment paper from the Instant Pot).
Cover the burger buns with a clean kitchen towel and let rise for about an hour, until they are noticeably puffy.
Melt the butter for the topping and brush the buns with about half of the butter. Sprinkle with sesame seeds (see below).
Bake The Burger Buns
Preheat your oven to 400°F and bake the buns for 16 to 18 minutes until golden brown. Turn the baking tray halfway through the bake.
If you have an oven like I do not all spots in the oven have the same heat. By turning the tray halfway through all the buns get the same color.
Remove the buns from the oven, and brush with the remaining melted butter. This will give the buns a satiny, buttery crust.
Cool the buns on a rack and your homemade hamburger buns are ready.
Brush Burger Buns With Melted Butter Or Egg Wash
Brushing burger buns with melted butter will give them a soft, light golden crust.
Brushing the buns with an egg wash (1 egg white beaten with 1/4 cup water) will give them a shinier, darker crust.
If you want seeded burger buns, brush the buns with the egg wash before you sprinkle the sesame seeds.
It will make the seeds stick to the bun better.
How To Store Burger Buns
There are a number of options to store these burger buns:
- Room temperature – If you are using the buns within a day or two the best way is to let them cool completely before you wrap them in a plastic bag and store them in a kitchen cabinet or bread box
- Freezer – if you have leftover buns let them cool completely, wrap the buns in a plastic bag and store them in the freezer. Let them thaw before use

- 3½ cups (420 grams) of bread flour or all-purpose flour
- ¾ to 1 cup (170 grams to 227 grams) of lukewarm water
- 2 tablespoons (28 grams) butter, at room temperature
- 1 tablespoon instant yeast
- ¼ cup (50g) sugar
- 1 large egg
- 1¼ teaspoons salt
- Topping:
- 1½ tablespoons melted butter
- 2 tablespoons of sesame seeds
Instructions
- Put all the ingredients bread flour, soft butter, yeast, sugar, salt, egg, and water in a bowl, stand mixer, or food processor and mix and knead it into a soft, smooth dough
- If you have an Instant Pot use this for the 1st rise else cover the dough and let it rise for 1 hour, or until it doubled in size
- Then gently deflate the dough, and divide it into 8 pieces. Use a scale to weigh the piece so you have the same size of buns
- Shape each piece into a round ball and slightly flatten it to about 3" across. Place the buns on a parchment paper, lined baking sheet.
- Cover, and let rise for about an hour, until noticeably puffy
- Brush the buns with about half of the melted butter
- Bake the buns in a preheated 400°F/200℃ oven for 16 to 18 minutes, until golden. Turn the tray halfway through the bake
- Remove them from the oven, and brush them with the remaining melted butter. Cool the buns on a rack
- Ready to serve

Thanks for this great recipe! I made the buns using soft spelt flour, vegan margarine substitute for the butter, 1/2 tbsp of honey instead of sugar, and 1 tbsp ground flax seeds instead of an egg.
