Beef Gyro Pizza

Shaved beef seasoned with gyro spices on a homemade pizza dough with feta cheese, tomatoes, onions, olives, and tzatziki sauce.

Ingredients

  • DOUGH:
  • 1 cup warm water
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1 TBSP honey
  • 3 cups bread flour
  • 1 tsp salt
  • 2 TBSP plus 1 tsp olive oil
  • TZATZIKI SAUCE:
  • 1/2 English cucumber,seeded, shredded, and squeezed dry (ends up being about 1/3 cup)
  • 4 oz plain Greek yogurt
  • 4 oz sour cream
  • 2 clove garlic, minced
  • 1 1/2 tsp dry dill
  • 2 tsp lemon juice
  • 1/4 tsp salt
  • dash pepper
  • GYRO SEASONED BEEF:
  • 1 TBSP olive oil
  • 14 oz shaved steak
  • 1 tsp granulated garlic
  • 1/2 tsp ground cumin
  • 1/4 tsp granulated onion
  • 1/4 tsp dried dill
  • 1/4 tsp dried oregano
  • 1/8 tsp dried thyme
  • 1/2 tsp rosemary, chopped
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • TOPPINGS:
  • prepared tzatziki sauce
  • prepared Gyro beef
  • 4 oz feta cheese, crumbled
  • 8 oz mozzarella cheese, shredded
  • 1/2 cup chopped Greek olives
  • 1/2 cup julienne cut red onions
  • 1/2 cup halved grape tomatoes

Directions

  1. DOUGH:

  2. In a large bowl or bowl of a stand mixer combine the water, yeast, and honey. Add the flour, salt, and 2 TBSP of the oil, mix until well combined and dough pulls away from sides of bowl.

  3. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.

  4. Form the dough into a ball and place in a large bowl with the remaining 1 tsp of olive oil. Flip the dough ball around to cover in the oil then loosely cover the dough and put in a warm place to rise for about 1 hour.

  5. THE PIZZA:

  6. Preheat the oven to 450°F. Lightly oil a large 16-inch pizza pan or a baking sheet and set aside.

  7. Mix all the ingredients for the tzatziki sauce and set aside.

  8. Heat the olive oil in a skillet over medium heat. Add the shave steak, garlic, cumin, onion, dill, oregano, thyme, rosemary, salt, and pepper to the pan. Cook, stirring occasionally, until the beef is browned, about 3 minutes.

  9. Punch down the dough then stretch it to fit on your oiled pizza pan. Spread the top side of the dough with the tzatziki sauce then sprinkle on the cheeses. Top with the gyro beef and the olives, onions, and tomato.

  10. Bake in the preheated oven for 14 to 17 minutes or until crust is golden brown.
