Take your flour tortillas to the next level and incorporate spinach into the mix. Add up the nutrients in your tortilla with spinach. It may look strange to see green tortillas but they taste amazing. So, are you ready to learn how to make spinach tortillas? Let’s get started!

Spinach tortillas are really easy to make from scratch. Spinach tortillas contain a lot of nutrients due to the spinach. They also taste amazing. Serve as a taco, fajita or turn it into an easy wrap.

What You Need For This Recipe

What is a spinach tortilla made of? Very little to be honest. To make your very own spinach tortillas you only need a limited number of ingredients.

Have the following ready:

  • All-purpose flour – you can use all-purpose or wheat flour to make a pliable and elastic dough
  • Spinach – I use canned spinach in this recipe but you can also use frozen or fresh spinach. If you use frozen let it thaw first and drain any excess liquid
  • Water – bind the dough
  • Sea salt – season with salt

How To Make Spinach Tortillas

  1. You can make spinach tortillas with canned, frozen, or fresh spinach. If you use canned spinach all you have to do is drain the excess liquid.
  2. With frozen spinach you let it thaw first in the fridge and drain any excess liquid as well. If you want to use fresh spinach start by pouring hot water over the spinach. You can put it in a skillet and let it cook over medium heat. Cook for 5 minutes until the spinach is wilted.
  3. If you have a lot of excess liquid in the pan drain first.
  4. Transfer the spinach to a blender. Blend until you have a smooth texture like a smoothie. Add water to the blender if needed. Then set aside.
  5. Take the mixer or food processor and add the flour and sea salt. Pulse a couple of times to combine. Add the spinach puree and process until completely combined. Then add water into the food processor until a dough forms.
  6. Let the dough rest for 10 minutes. Dust a board with flour and divide the dough into about 6-8 portions. Roll the portions into balls using your hands.
  7. Sprinkle the dough balls with flour and roll each ball into a tortilla about ⅛ inch thick.
  8. Heat a non-stick skillet or cast-iron griddle over medium-high heat. Put a tortilla in the skillet. Cook for 1 to 2 minutes on each side. Flip the tortilla after about one minute.
  9. The bright green of the tortilla will turn into a darker green, the dough will bubble while it cooks and dark patches become visible. Take the tortilla out of the pan.
  10. Stack the cooked tortilla and cover it with a clean kitchen towel. Repeat for the remaining dough.
  11. The spinach tortillas are ready to serve.

Green Tortilla Recipe

You can make spinach tortillas with fresh baby spinach or with frozen or canned spinach. In all cases, it is wise to heat the spinach and put it in a blender. When you warm fresh spinach, you get wilted spinach.

By mixing it up in the blender you get a very fine texture that you want in your tortillas. I used canned spinach and mixed it first before adding it to the tortilla mixture.

You can make your tortillas by hand or you can use a food processor. The food processor gets the job done fast but it is no problem to make the dough by hand.

Always give your dough a little time to rest to put the gluten to work.

If you use fresh spinach you need about 4 cups of fresh spinach. This should reduce to approximately ½ cup of spinach. So, if you use frozen or canned spinach you need ½ cup of spinach.

How To Store Flour Tortillas?

There a several ways to store flour tortillas. You can store them:

  • Room temperature – when you are going to serve the tortillas within two days put the tortillas in a ziplock bag after they cooled completely. You can reheat them in a skillet before serving
  • Refrigerator – let the tortillas cool completely. Put them in a Ziploc bag and store the tortillas in the refrigerator if you want to store them for 3 to 4 days
  • Freezer – want to store them even longer put them in a Ziploc bag or food container and store them in the freezer for up to 3 months

How To Reheat Flour Tortillas

Just like storing tortillas you also have multiple options to reheat:

  • Cast-iron skillet – just like cooking your tortillas you can also reheat your tortillas. Preheat a cast-iron skillet to medium and add your tortillas one by one. Heat them for 20 to 30 seconds, turn and reheat the other side. Keep them warm in a tortilla warmer or in a clean kitchen towel
  • Oven – you can also reheat your tortillas in the oven. Preheat your oven to 350℉. Wrap a stack of tortillas in aluminum foil. Make sure the aluminum foil covers all the tortillas else they get crispy instead of soft. Reheat for 5 minutes or until warm
  • Microwave – you can also reheat tortillas in the microwave. Take a paper towel and spray it with water. Put a wet paper towel between two tortillas and add one on top. Stack up to 4 tortillas and heat for 30-second bursts. Check to see if the tortillas are warm

Are Spinach Tortillas Keto?

No, if you make spinach tortillas with regular all-purpose flour then your tortillas are not keto because all-purpose flour is not low-carb.

If you make tortillas with e.g. almond flour then you can turn it into a low-carb tortilla.

Ingredients

  • 2 cups all-purpose flour, plus more as needed
  • 1/2 cup cooked spinach
  • 1/4 cup water, plus more, as needed
  • Pinch of sea salt

Instructions

  1. If you use fresh spinach start with pouring hot water over the spinach. You can put it in a skillet and let it cook over medium heat. Cook for 5 minutes until the spinach is wilted
  2. Transfer the spinach to a blender. Blend until you have a smooth texture like a smoothie. Add water to the blender if needed. Set aside
  3. Take the food processor and add the flour and sea salt. Pulse a couple of times to combine
  4. Add the pureed spinach and process until completely combined. Add the water in the food processors until a dough forms
  5. Dust a board with flour and divide the dough into about 6-8 portions. Roll the portions into balls into using your hands
  6. Sprinkle the dough balls with flour and roll each ball into a tortilla about 1/8 inch thick
  7. Heat a non-stick skillet or griddle over medium-high heat. Put a tortilla on in the skillet
  8. Cook for 1 to 2 minutes flip the tortilla after about one minute and cook the other side
  9. The bright green of the tortilla will turn into a darker green and the dough will show bubbles and dark patches become visible
  10. Stack the cooked tortilla and cover with a clean kitchen towel
  11. Ready to serve

Notes

If you want to use frozen spinach, thaw first before you put it in the blender

    This looks very inviting. But…. what are the ratios among the ingredients? I don’t see a recipe anywhere! How much flour for how much salt and how much oil?
