This quarantine has my family eating a lot of beans. So i have been trying new ways to prepare them. So I decided to make Vegan Boston Baked Beans.

I was watching Mythical Kitchen last night, and they were showing all the fun ways to eat beans during this pandemic. They did shakshuka, black bean brownies, and the oh so delicious baked bean. But they used bacon fat…which I will not πŸ™‚

When I say these beans are good, it is an understatement. They have an amazing addictive quality. Almost like a sweet and tangy bean jam. My daughter ate bowlful after bowlful…each bite followed by an enthusiastic mmmmm….

What is great about this recipe is its easy execution. I used canned beans, which of course is a huge time savor. These aren’t overly sweet like your typical canned baked beans.

These are a great side dish to any meal. Perfect along any protein, toss it along with some pasta or rice. Also try it with some fresh homemade bread.

Vegan Baked Beans
Not your typical baked beans. Packed with flavor, and incredibly easy to execute

Ingredients
  • 2 tablespoons olive oil
  • 1 medium diced onion
  • 3 cloves minced garlic
  • 1 15 ounce can of tomato sauce or diced tomato
  • ½ cup pure maple syrup
  • 2 teaspoons of mustard powder
  • 1 teaspoon salt
  • ¼ teaspoon all spice
  • 1 bay leaf
  • 2 15 ounce cans of white beans. Drained and rinsed. Cannellini Beans or Great Northern beans work great
Instructions
  1. Preheat oven to 350 degrees
  2. Preheat oven safe pot over medium heat
  3. Saute oil for ten minutes in olive oil. Brown them. Add garlic and saute for one minute
  4. Add tomato sauce
  5. Add maple syrup, and all the spices to the pot.
  6. Cook for 5 more minutes
  7. Add Beans
  8. Place pan in the oven with a cover
  9. Bake for 1 hour. Stir after 30 minutes
  10. Keep warm until ready to serve
Notes
Tastes great with toast or homemade pita bread!
