Brownies no longer have to be empty calories!

These vegan black bean brownies are amazing:) I was skeptical about this baking hack. How can beans substitute flour in a brownie…I mean come on! So I made this for my daughter, and she nearly ate the entire tray…she had no idea they were made with black beans. Neither did my husband. They were everything you want your brownie to be. It was moist, decadent, fudgy and oh so chocolatey.

I was watching my new favorite cooking show on Youtube Mythical Kitchen. They are doing thisΒ  group of videos specific to quarantine hacks in the kitchen. This week was bean hacks. So this was my inspiration, and boy am I glad I tuned in . I will never make regular brownies again.

This recipe is the perfect one bowl recipe. You literally place all the ingredients in a food processor and blend until it is smooth.

Yup it is that easy!

Vegan and Gluten Free Black Bean Brownies

Ingredients
  • 1 can rinsed black beans
  • 2 tablespoons cocoa powder
  • ½ cup maple syrup
  • ½ cup and 1 tablespoon rolled oats
  • ¼ teaspoon of salt
  • ¼ cup melted coconut oil
  • ½ teaspoon baking powder
  • ½ cup of Vegan chocolate chips
  • ⅓ cup peanut butter chips (optional)
Instructions
  1. Preheat oven to 350 degrees
  2. Grease a 8x8 pan
  3. Blend all ingredients in a food processor
  4. Gently fold in chocolate chips
  5. Pour into pan
  6. Sprinkle with extra chocolate chips/and or peanut butter chips (optional)
  7. Bake for 18 minutes
  8. Turn midway
  9. Let cool on rack for at least 10 minutes before cutting
  10. If soft, place in fridge to firm up.
