How To Make Pork Chops With Mushroom Sauce
Preheat your skillet before adding olive oil. When the oil is warm you can add butter and let it melt.
Sear the pork chops for 5-7 minutes in the butter oil. Turn the pork chops regularly to sear the other side as well. Cook until golden brown.
Take the pork chops out of the pan and put them on a plate and set them aside.
Then take the strips of bacon and chop them up. Add these to the hot skillet and stir until the bacon is crispy.
As the bacon has enough fat you do not need to add any additional oil or butter.
Then add the finely chopped onion and minced garlic and stir until the onion is soft and translucent. This will take about 3 minutes.
Melt more butter with the onion mix before adding the sliced mushrooms. Stir for about 3 minutes until soft.
Now it is time to stir in the cooking cream. Add the wine or chicken broth whichever you prefer and bring the sauce to a simmer.
Let the mushroom sauce cook until it thickens.
Then you can add the chopped parsley and season with more salt and pepper to taste.
Leave the sauce bubbling for another 2 minutes and stir occasionally.
Return the pork chops to the pan and let it warm through for 5 minutes on medium heat.
Garnish with fresh parsley and you are ready to serve the pork chops.
Why Are My Pork Chops So Tough?
You might have left them in the pan for too long, cooked them on high heat, or both.
Pork chops are usually a lean cut of meat and should be overcooked.
So, by heating a pan to medium-hot and searing the pork chops for a short period of time should prevent them from going tough.
How Do You Keep Pork Chops From Drying Out?
There are a number of ways to prevent pork chops from drying out:
- Room temperature – before you start cooking your pork chops let them get to room temperature. More juices will be in the meat
- Medium heat – when cooking the pork chops in a skillet, do not cook them on high heat. You want nice brown chops but if you bake them too fast all moisture will leave the meat and dry out. So set to medium-hot
- Chicken broth – use a bit of chicken broth in your sauce. This will prevent the meat from drying out
- Rest – before you return the pork chops in the sauce let them rest for a couple of minutes. Wrap them in aluminum foil to retain all the meat juice
- Vinegar – use some vinegar to marinate the pork in before cooking it. Vinegar is a great way to tenderize pork
