What You Need For This Recipe

To make these empanadas you need several ingredients. Put the following ingredients on your grocery shopping list:

  • Dough – make empanada dough for baking or use store-bought dough
  • Eggs – large eggs
  • Onion – finely dice the onion
  • Mushrooms – finely slice the mushrooms
  • Bell pepper – dice sweet red bell pepper
  • Salt – to season
  • Ground black pepper – to taste
  • Olive oil – to bake the ingredients

How To Make Breakfast Empanadas

  1. Make the empanada dough as described in the recipe or use store-bought empanada dough. Take a small bowl to whisk the eggs and season to taste. Finely dice the onions and sweet red pepper.
  2. Also, slice the mushrooms. Preheat a skillet and add olive oil. Add the diced onion and red pepper and stir through the pan to soften.
  3. Stir continuously until the onion is translucent. Then add the mushrooms to brown. When the mushrooms are brown take the onion mix out of the skillet and put it in a bowl. Set aside.
  4. Add a bit more oil to the skillet, add the whisked eggs, and stir into a scramble.
  5. Then add the vegetable mix and stir it through until combined. Take the skillet off the stove and set it aside. Then preheat your oven to 400℉/200℃.
  6. Take the empanada dough out of the fridge and cut the empanada discs using an empanada mold or small plate. Put a tablespoon of egg mixture and vegetable mix and place it in the middle of the discs.
  7. Close the empanada and fold either using the empanada mold or using a fork. Put the empanada on a baking tray lined with baking paper.
  8. Repeat this step for the remaining empanada. Whisk an egg and add a teaspoon of water. Brush the empanadas with the egg wash. Bake the breakfast empanadas in the oven for 20-25 minutes or until golden brown.

  2. Whisk the eggs and season to taste. Finely dice the onions, sweet red pepper, and slice the mushrooms.
  3. Preheat a skillet and add olive oil. Add the diced onion and red pepper and stir through the pan to soften.
  4. Stir continuously until the onion is translucent. Then add the mushrooms and stir until brown. Take out of the skillet in a bowl and set aside
  5. Add a bit more oil to the skillet, add the whisked eggs and stir into a scramble
  6. Add the vegetable mix and stir it through until combined. Take off the stove and set aside
  7. Preheat your oven to 400℉/200℃

  9. Turn over the dough and close it with a fork. Put the empanada on a baking tray lined with baking paper

  12. Bake for 20-25 minutes or until golden brown
  13. Ready to serve
