It has been a while since we made an enchilada recipe, but today we have a great recipe! These turkey enchiladas taste amazing. They are quite easy to make and are on the table in no time. So, are you ready to learn how to make turkey enchiladas? Let’s get started!

What You Need For This Recipe

To make this enchilada recipe you need several ingredients. Put the following items on your grocery shopping list:

  • Ground turkey – you can also use ground chicken but turkey is fatter and has more flavor
  • Tortillas – we use small flour tortillas for this recipe
  • Vegetable oil – you can use your favorite oil like olive oil, avocado oil or sunflower oil
  • Onion – use a regular or sweet white onion
  • Red pepper – you can use sweet red bell pepper and finely chop them
  • Tomato Frito sauce – this is a tomato sauce made with onion and garlic. You can make it yourself or buy it in the store
  • Kidney beans – canned kidney beans
  • Seasoning – for this recipe use enchilada seasoning. Make it yourself or use store-bought seasoning
  • Grated cheese – you can choose a cheese that melts well like mozzarella, Gouda, or Gruyere cheese

How To Make Turkey Enchiladas

  1. Start this recipe by preheating the oven to 400℉/200℃. Then preheat a large non-stick frying pan or skillet. Add the ground turkey and pan-fry it before adding the finely chopped onion and red pepper. Pan-fry for 5 minutes.
  2. Stir regularly to break up the mince with a wooden spoon. When the minced turkey is browned you can add the tomato Frito sauce and the kidney beans.
  3. Add the enchilada seasoning and stir. Bring to a gentle simmer and cook the turkey mixture for 10 minutes, stirring regularly. Take the skillet from the heat.
  4. Lightly grease a shallow ovenproof dish with oil. Put a small tortilla in the oven dish and add a couple of generous spoons full of the turkey mixture.
  5. Roll up the tortilla and push it to one side of the oven dish. Repeat with the remaining 5 tortillas. Then spoon any leftover turkey mixtures down the sides of the oven dish.
  6. Sprinkle grated cheese on the tortillas and put the dish in the middle of the oven. Bake for 15 minutes or until the cheese is completely melted.
  7. Take out of the oven and serve immediately.

How To Store Turkey Enchiladas

There are several ways to store leftover enchiladas or when you prepared enchiladas ahead of time:

  • Fridge – let them cool completely before storing them in the fridge. You can keep it in the fridge covered with foil for up to 2 days. Then bake for another 10 minutes at 350℉ to reheat
  • Freezer – store in the freezer in an airtight container or a Ziploc bag. When you want to eat thaw first before reheating in the oven

You can also keep the enchiladas in the bakeware and cover it with aluminum foil before storing them. That way you can reheat the enchiladas in the baking dish.

How To Reheat Enchiladas

If your enchiladas are frozen let them thaw in the fridge overnight. Keep them covered so they will not dry out while they thaw.

Reheat Methods

You can reheat your turkey enchiladas or any prepared ahead or leftover enchiladas using one of the following methods:

  • Oven – you can reheat your enchiladas in the oven. Preheat your oven to 375℉ and put the enchiladas in a baking dish in the middle of the oven. Reheat for 10 to 12 minutes or until at least 165℉ in the center of the enchiladas. If the enchiladas are already brown cover the baking dish with aluminum foil to prevent them from burning
  • Cast-iron skillet – you can also reheat your enchiladas in a cast-iron skillet. Preheat the skillet to medium-hot. You can brush the cast iron with oil or cooking spray before adding the enchiladas to the skillet. Let the enchiladas warm through for at least 10 to 15 minutes
  • Air Fryer – if your enchiladas fit in an Air Fryer, preheat it to 375℉. Put the enchiladas in a cake pan or wrap them in aluminum foil. If the enchiladas are browned cover the cake pan with aluminum foil. Warm for 7-10 minutes or until warmed through
  • Instant Pot – you can also use a pressure cooker to reheat your enchiladas
    • Keep warm – to warm gradually put the enchiladas in the Instant Pot cover with the lid and use the Keep Warm option
    • Sauté – want to warm them faster press the Sauté button. Keep the lid off and turn regularly until warm.
    • Steam– put the enchiladas in a glass dish that fits the pressure cooker. Add one cup of water to the Instant Pot pot and add a trivet. Put the dish on top of the trivet. Close the lid and secure it into the sealing position. Select the Steam option for 5 minutes. When the cooking time is done do a quick-release
  • Microwave – you can also warm the enchiladas in the microwave. Wrap a microwave-safe dish with plastic wrap. Poke a couple of holes in the plastic so hot air can escape. Warm for 3 minutes and check to see if the enchiladas are hot else extend the heating time by 30 seconds until warmed through

  1. Preheat the over to 400℉/200℃. Preheat a large non-stick frying pan or skillet. Add the turkey and pan-fry it with finely chopped onion and red pepper for 5 minutes
  2. Stir regularly to break up the mince with a wooden spoon. When the minced turkey is browned add the tomato fruit sauce and the kidney beans
  3. Add the enchilada seasoning and stir. Bring to a gentle simmer and cook the turkey mixture for 10 minutes, stirring regularly
  4. Take the skillet from the heat. Lightly grease a shallow ovenproof dish with oil. Put a tortilla in the oven dish and add a couple of generous spoonfuls of the turkey mixture
  5. Roll up the tortilla and push to one side of the oven dish. Repeat with the remaining 5 tortillas
  6. Then spoon any of the remaining turkey mixture down the sides of the oven dish
  7. Sprinkle the tortillas with the cheese and bake for 15 mins or until the cheese is completely melted
  8. Take out of the oven and serve immediately
