Happy Monday guys! Recipe of the day is White Chocolate Meringues – indulgent crunchy meringues, generously covered in white chocolate, with soft marshmallow centre. 🤤

White Chocolate Meringues

I made this giant meringues over the weekend and surprisingly, we’ve got a couple left. They’re usually gone pretty quickly.

I really enjoy making these – they are very simple and the meringue recipe I follow, always works. Just make sure to use completely dry bowls and add the sugar very slowly, whisking the eggs constantly. Bake them in the oven for three hours and you’ll get crunchy on the outside and soft and chewy on the inside marshmallows.

What you need:

  • egg whites
  • sugar
  • white chocolate
  • white wine vinegar
  • cornflour
  • edible rose petals for decoration

Here’s how to make these pretty White Chocolate Meringues

Ingredients:

  • 6 egg whites
  • 300g sugar
  • 1tbsp cornflour
  • 1tbsp white wine vinegar
  • 200g white chocolate, melted
  • edible rose petals for decoration

Preparation:

  • Preheat the oven to 150°C.
  • Place the egg whites in a bowl and whisk on a high speed. Gradually ad the sugar until the mixture is smooth and glossy.
  • Add the cornflour and vinegar and continue whisking on a lower speed until the mixture forms stiff peaks
  • Spread the meringues on a baking tray lined with parchment. I make mine different sizes so feel free to make the as big as you wish.
  • Bake in the oven for 10 minutes then reduce to 100°C and bake for another three hours.
  • Top the meringues with the melted white chocolate and sprinkle the edible rose petals on top
