Curry Beef with Coconut Milk

Ingredients

For the seasoning

  • 2 lb Beef chunks
  • 4 tbsp Curry powder
  • 4 tbsp Worcestershire sauce
  • 2 medium Pimento peppers finely diced
  • 2 medium Garlic cloves minced
  • 1 medium Onion finely diced
  • 1 medium Bell pepper finely chopped
  • Salt to taste
  • Black pepper to taste

For the stew

  • 4 tbsp Tomato paste
  • 4 sprigs Fresh thyme
  • 4 sprigs Fresh parsley
  • 3-4 cups Water
  • 1/2 cups Coconut milk
  • 2 medium Potatoes diced
  • 4 tbsp Curry powder
  • 2 tbsp Oil
  • Salt to taste

Instructions

  • In a bowl, season the beef with all the seasonings listed above. Let it marinate for 4 hours or overnight.
  • Heat a large pot with oil over medium-high heat, sear the meat and the veggies for 3-4 minutes.
  • Stir in the water, coconut milk, curry, salt, tomato paste, thyme and parsley.
  • Lower the heat to low and let the meat cook for 1 & 1/2 hour then add the potatoes and let it cook for an additional 20-30 minutes.
