Cheesy Zucchini & Potatoes Bake

Happy Thursday guys! Today’s recipe is Cheesy Zucchini & Potatoes Bake – really simple but very satisfying vegetarian dish.

Cheesy Zucchini & Potatoes Bake

Serve it as a main or side dish, hot or cold, it is delicious. I prefer it warm though, as all that cheese is melted and gooey. 🙂

What you need:

  • zucchini/courgettes
  • potatoes
  • mild Cheddar
  • dill
  • butter
  • olive oil
  • salt and pepper
  • onion
  • garlic
  • an egg
  • flour
  • yogurt

Here’s how to make this delicious Cheesy Zucchini & Potatoes Bake

Ingredients:

  • 2 zucchini, cut into small cubes
  • 2 large potatoes, cut into cubes (same size as the zucchini)
  • 1 small onion, chopped
  • 2 garlic cloves crushed
  • 150g mild Cheddar, grated
  • 50g butter
  • 1tbsp olive oil
  • 2-3 sprigs of dill, chopped
  • salt and pepper to taste

For the top layer:

  • 1 egg
  • 2tbsp flour
  • 3-4tbsp yogurt

Preparation:

  • Preheat the oven to 200°C.
  • Heat a pan with the olive oil and butter and sweat the onions and garlic for five minutes. Add the zucchini and potatoes and pour the water, cover with a lid and leave for about 15 minutes to soften.
  • Season with salt and pepper and remove from the heat. Stir in the cheese.
  • to make the top layer, simply whisk all the ingredients together and pour over the zucchini and potatoes.
  • Bake in the oven for about 20 minutes.
  • Serve it with some sour cream or yogurt, if wished.
