You guys know that I have created my fair share of brownie recipes. I’ve got my Easy & Healthy Brownies, Fudgy Vegan Chickpea Brownies, and Brownie Batter Truffles … and now the new addition to the list are these Paleo Sweet Potato Brownies. And trust me when I tell you, they are an amazing addition. I love brownies in all shapes and sizes, chewy and cakey, crispy corner pieces and soft middle ones … but I have to say these gotta be my favorite kind. These sweet potato brownies are decadently rich, bursting with chocolate favor, and have that incredible slightly underbaked gooey texture. If you have a sweet tooth and are a big chocolate fan like I am, there is no doubt in my mind that they will be your new favorite as well. Oh and they’re also paleo and filled with incredibly wholesome ingredients!

What you need for these Paleo Sweet Potato Brownies!

  • sweet potato
  • egg
  • coconut sugar
  • cocoa powder
  • vanilla extract
  • dairy free chocolate chips
  • almond flour
  • almond milk
  • baking powder
  • salt
  • coconut oil

The base of these brownies is pretty obvious, sweet potato. I actually love baking with sweet potato! It adds a nice sweetness to the treat and the use of it also means that less flour is need. The brownies are sweetened with coconut sugar, which is my favorite refined sugar free option. Then for the best part, the chocolate. These get their incredible chocolate flavor from a combination of cocoa powder and melted dairy free chocolate chips. The melted chocolate chips are actually the best and most key ingredient in my opinion. The flavor they add is unbeatable and they also help to create that rich and smooth texture. For some more flavor there is vanilla extract, which I think is a highly underrated baking ingredient. Lastly, the flour used in these is almond flour. Almond flour is gluten free and grain free and makes a wonderful texture in baked goods!

How to make these Paleo Sweet Potato Brownies!

  1. Set the oven to 400 degrees.
  2. Poke several wholes in a lager sweet potato (or 2 smaller ones) and then roast for about 60 minutes. You can do shorter, as long as the sweet potato is soft, but the longe you roast it, the sweeter the sweet potato will be, and then the sweeter your brownies will be.
  3. Mash the sweet potato and measure out 1 cup of it, let cool. Change the oven temperature to 350 degrees.
  4. Combine the mashed sweet potato with the egg, coconut sugar, vanilla extract, and almond milk.
  5. Microwave the dairy free chocolate chips with a tiny bit of coconut oil in 10-15 second increments. Mix the chocolate in between each round. Repeat the process until it is fully melted.
  6. Add the melted chocolate into the sweet potato mixture and combine until smooth.
  7. Next add in the almond flour, cocoa powder, baking powder, and a sprinkle of salt.
  8. Spread the brownie batter in a greased or parchment paper lined 8×8 baking tray.
  9. Bake for 18-20 minutes at 350 degrees. (You can also do the toothpick trick here where you stick the toothpick in to see if the brownies are done. However, with these brownies because of the slightly under-baked texture it won’t come out completely clean. Just make sure its not pure batter on the toothpick haha!)
  10. Enjoy!
  11. You can store on the counter for a few days, but after that I recommend moving to the freezer.
