It is an exciting time to be an Oregonian, friends. Wanna know why? Bread from The Rustik Oven is officially in stores here! There are three varieties: Artisan White, Sourdough and Hearty Grains & Seeds. Hearty Grains & Seeds has been in heavy rotation for breakfasts around here and I keep reaching for the Artisan White and Sourdough for “special occasion” dishes, like this one!

The Rustik Oven brand was inspired by a traditional, European style of baking. One of my favorite things about this bread is that it’s made using just a few simple ingredients, so I feel really good about eating it. And how cool is this: thanks to a special fermentation process, the bread stays fresh for 12 days so you get that same delicious artisan taste as you would from a loaf from your favorite bakery but you don’t need to rush to use it up in two or three days before it goes stale.

Okay, let’s get to the ricotta toast. I feel like I’ve been seeing ricotta on toast everywhere lately, and I had to try it for myself. I chose to mix it with a little mint and top it all off with a drizzle of honey and slices of blood orange.

Butter each side of The Rustik Oven Artisan White bread liberally – no one ever made a good meal being shy with the butter. Heat a heavy-bottomed skillet over medium heat – I use my cast iron skillet. Griddle the bread on each side until it’s golden brown.

In a small bowl, mix the ricotta, mint, and honey together, then spread the mixture over the griddled slices and top with blood orange slices. Easy peezy.

Rustik puts a huge emphasis on its signature process: taking the time to make bread the right way, allowing it to ferment for at least 14 hours, rise and slow bake in real stone ovens. It’s all about bringing baking back to its roots and delivering real, authentic, delicious bread that you can now find in the grocery store. You’re gonna love it.
