Chicken and broccoli florets topped with stuffing mix and cheddar cheese creates a delicious easy casserole. It is creamy with cheesy topping with chicken stuffing mix. Only five ingredients are needed to make this casserole, and it is ready in 45 minutes. This warm and comforting casserole is the perfect meal to enjoy any time of the year, because it is so quick and easy to prepare. Serve with a side of bread and your favorite vegetables for an easy weeknight meal.

You can use precooked chicken such as a rotisserie chicken for this. Or you can cook chicken and then dice it before adding it in the casserole. For the broccoli florets you can use either frozen or fresh broccoli, they need to be cooked according to its package directions. Mix the diced chicken and broccoli with a can of cream of mushroom soup together in a greased baking dish. Prepare the chicken stuffing mix according to the package directions. Evenly spread the stuffing mixture over the chicken and broccoli mixture. Sprinkle with shredded cheddar cheese and bake until the cheese has melted.

  • 1 pound cooked chicken, diced
  • 12 oz. frozen broccoli florets
  • 1 ( 10 oz.) box chicken stuffing mix
  • 1 ( 14 oz.) can cream of mushroom soup
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 375 F. Cook broccoli according to package directions. Prepare stuffing mix according to package directions.
  • In a large greased baking dish, combine cooked diced chicken, broccoli florets and cream of mushroom soup. Place prepared stuffing mix over chicken and broccoli mixture. Sprinkle shredded cheese on top. Bake for 25-30 minutes.
