What You Need For This Recipe

To make this Middle Eastern Street food chicken shawarma you need a limited number of ingredients. Make certain you have the following ingredients ready:

  • Chicken thighs – this recipe needs boneless and skinless chicken thighs. Remove excess fat
  • Olive oil – use good quality olive oil
  • Seasoning – to season the chicken thighs use shawarma seasoning
  • Onion – you can use regular or sweet white onion
  • Garlic – fresh garlic cloves
  • Bell peppers – use sweet red bell peppers
  • Tomatoes – I like to use Roma tomatoes
  • Scallions – thinly slices
  • Bread – the shawarma can be served with pita bread or Gyro bread
  • Lemon juice – fresh lemon juice

How To Make Chicken Shawarma Wrap

  1. To make this recipe you start with cleaning the chicken thighs. Remove skin, veins, and fat from the chicken. Sprinkle with lemon juice. Set aside.
  2. Take the shawarma seasoning and combine it with the olive oil into a marinade. Add the chicken thighs and stir to cover with marinade.
  3. Put in the fridge to marinate for 15 to 30 minutes longer if you have time.
  4. Preheat a skillet to medium-hot. You do not need to add oil to the skillet as the marinade contains olive oil. Put the chicken thighs in the skillet. Let the chicken cook for 4 to 5 minutes. Resist the urge to move it around. The chicken will release all nice and browned. Turn the chicken and bake the other side.
  5. Slice the sweet red peppers and chop half of the onion. Add to the skillet and bake along with the chicken until soft. When the chicken is baked through take the skillet from the stove and let it rest for 5 minutes.
  6. In the meanwhile, thinly slice the onion with a mandolin slicer or sharp knife, and slice the scallions and tomatoes.
  7. Wrap gyro bread or pita bread in aluminum foil and warm in the oven at 375℉/190℃ for 8-10 minutes.
  8. Slice the chicken and pile it onto the flatbreads. Sprinkle with sliced scallions, onion rings, and sliced tomatoes. Drizzle with some garlic yogurt sauce like tzatziki or roasted tomato salsa.
  9. Ready to serve.

How To Store Shawarma Wraps?

There are several ways to store your shawarma wraps. In all cases let them cool completely before storing them:

  • Refrigerator – you can store the wraps for at least 2 days. I recommend keeping the chicken and wraps separately when you want to store them in the fridge. The wraps can turn soggy with all the chicken and gravy. You can also store the wraps outside of the fridge in a Ziploc bag. When you want to store the chicken put it in an airtight food container
  • Freezer – if you want to store it longer keep the wraps in the freezer. Pack them individually in aluminum foil and then in a freezer bag or food container so you can label them. You freeze it for up to 3 months. Do not add any lettuce to your wraps when you plan on storing them. Lettuce doesn’t freeze well

How To Reheat Chicken Shawarma Wrap?

There are several ways to reheat shawarma wraps.

  • Oven – preheat your oven to 375℉/190℃ and put your chicken shawarma wraps, wrapped in aluminum foil on a baking sheet. Reheat for 10 minutes or until warmed through. The aluminum foil will keep the moisture in your wraps and prevent them from going crunchy
  • Air Fryer – preheat your Air Fryer to 350℉/175℃ for 3 minutes. Wrap the shawarma wrap in foil then add the wraps to the Air Fryer basket and warm for 7 to 10 minutes or until warmed through
  • Cast-iron skillet – you can also warm the wraps in a cast-iron skillet. Preferably warm the chicken shawarma first as it takes longer to warm. Take a second cast-iron skillet to warm the wraps or use your oven. Stack the wrap and wrap them in foil at 325℉/163℃ for 5 minutes

Chicken Shawarma Wrap

Ingredients

  • 500-gram chicken thighs skinless boneless
  • ½ sweet red pepper
  • 2 tablespoons shawarma seasoning
  • 1 large garlic clove, minced (or 2 small cloves)
  • 1 onion
  • 2 tablespoon lemon juice
  • 3 tablespoon olive oil
  • 1 tomato
  • 1 scallion
  • 4 gyro flatbreads

Instructions

  1. Remove skin, veins and fat from the chicken thighs. Set aside.
  2. Combine the shawarma seasoning and olive oil into a marinade. Add the chicken thighs and stir to cover with marinade
  3. Put in the fridge to marinate for 15 to 30 minutes longer if you have time
  4. Preheat a skillet to medium-hot. Put the chicken thighs in the skillet. Let the chicken cook for 4 to 5 minutes. Resist the urge to move it around

  9. Warm the gyro flatbreads in the oven at 375℉ for 8-10 minutes
  10. Slice the chicken and pile onto the flatbreads. Sprinkle with sliced scallions, onion rings, and sliced tomatoes
  11. Ready to serve
