Meatballs make one of my top fast freezer meals for beginners simply because usually when I want meatballs I don’t have the time to roll meatballs.. Anyone else with me? So, I love making them ahead of time and just pulling them out and popping them into my crock pot or instant pot. One thing I found out is you can freeze mini pizzas…no…I’m not talking about Digiorno… lol.. I’m talking about homemade pizzas or mini pizzas that you make and then you can freeze for later use. This is very useful if you have kids or bachelors.

To freeze the mini pizzas, first you have to let them cool after cooking then wrap them in plastic wrap or use silicone dividers and put them into a ziploc bag. They store in the freezer for 1-1.5 months. Then pop them out let them thaw for a few minutes and put them in the microwave..BAM homemade mini pizzas… You will be the talk of the kids around the block! My next amazing EASY fast freezer meals for beginners is Shredded pork! And my friend Simone has an amazing Carne Adobada recipe that is perfect for freezing. Not only does this have little ingredients (unless you count spices which I don’t lol) it is packed with flavor! Another reason I love freezing pulled pork is because you can use it in all sorts of dishes like tacos, burritos, sandwiches, and so much more! Click on the picture below to get her recipe!

A bonus I will give you guys is to go out and buy a rotisserie chicken and shred that sucker up! Measure out about 2 cups and divide them into small silicone ziploc bags and BAM you have shredded chicken for things like pulled chicken sandwiches, chicken and rice, chicken and dumplings, chicken alfredo, etc.. the possibilities are endless!

Ok, back to my list! We are on number 4 I believe. I think every freezer should be stocked with some sort of sandwiches or burritos for easy quick use to pop in the microwave on busy days, like these awesome breakfast sandwiches over at mealsandmilemarkers. For my last fast freezer meals for beginners I wanted to give you guys something we make all the time and I mean we eat this at least a few times a month. CHILI!!! Chili is actually one of my favorite foods to eat, especially when it’s a little cold outside.

Another main reason I love it so much is because I can make a HUGE amount and whatever is left, divi it up and freeze it. When I make chili I usually make enough for 3-4 meals. You can make this chili as hot as you want, we usually don’t make it too hot because 2/3 kids do not like spicy things. Sometimes, if I’m craving spice I will make a non-spicy pot and a spicy one lol

This chili is fast and easy just the way we like it! I know a lot of people don’t like beans in their chili but we love the beans! I use whatever beans I have in the pantry so we aren’t wasting anything. Here you go, this is the perfect addition to the fast freezer meals for beginners round up.

Easy HEARTY Chili

Easy simple fast and delicious chili with Freezer instructions as well

Equipment

  • large pot
  • skillet or frying pan

Ingredients

  • 2 lbs ground beef 80-85% works best
  • 1 medium onion chopped
  • 1 medium bell pepper chopped
  • 1 can red kidney beans do not drain
  • 1 can black beans do not drain
  • 1 can rotel tomato blend you can use mild or spicy
  • 2 cans diced tomatoes do not drain
  • 1 can stewed tomatoes do not drain
  • 3 cloves garlic minced
  • 1 tbsp salt
  • 1 tbsp pepper
  • 2 tbsp chili powder you can add more or less depending on your spice level
  • 1 tbsp garlic powder
  • 1 tsp oregano
  • 1 tbsp cumin
  • 1 tsp white sugar or sugar substitute (if using substitute only use 1/2 tsp)

Instructions

  • Cook ground beef in skillet until no longer pink, drain, set aside
  • in same skillet saute up the onions garlic and bell pepper until onions are translucent (about 2-3 mins)
  • Dump meat, all cans, all veggies, and all spices into a large pot or stock pot
  • Stir up mixture and let mixture come to a boil
  • Once chili has come to a boil put heat on low, cover, and let simmer for one hour (or longer if you have the time)
  • Serve with cheese, sour cream, chips, crackers whatever your heart desires.

Notes

This is a very versatile recipe. Use whatever beans you have in your pantry! 
Use different toppings, throw in some jalapenos for more spice!
Add some fresh cherry tomatoes on top with some corn 
The possibilities are endless

To freeze this all you need to do is let it cool and place in a few gallon freezer bags, make sure you label each bag CHILI and the date. This stays good in the freezer for a long time! 6 months I know for sure, probably more but I haven’t tested that out yet.

Usually with tacos I am always scrambling for stuffing, which is why I give up making up. I should try your method. Thanks for this post.

  4. Freezer meals are a great idea for busy families, Felicia. I am sure these recipes are super-helpful. I usually avoid making freezer meals mainly because of our frequent power cuts. Also, I find it easier to cook fresh and eat. Once in a while we do have leftovers that I keep in the fridge and finish the next day.

    1. Fresh is always best but for my family we aren’t able to always eat fresh so freezer meals come in handy for us. We save our leftovers too and if it’s enough to make another meal we freeze it. Mainly things like spaghetti sauces or taco meats we will have enough for another meal so it gets put in the freezer.

I also love the idea of mini pizzas and shredded pork! I have actually never made shredded pork – definitely going to try that one out!

    1. We are a chili eating family here! We love our chili and we eat it in various ways all the time. My son and myself love the spicy versions while everyone else likes the milder ones lol

I love the frozen pizza idea, I never thought about freezing pizza but after reading your blog I’m going to try it out. i’m using frozen kidney beans and chickpea for later but would use more of your ideas for the lockdown period.
