Cheesy quesadillas filled with fresh broccoli florets is the perfect healthy lunch or dinner. Broccoli and cheddar cheese is a classic flavor combination because the flavors go so well with each other. Only three ingredients are needed to make these cheesy quesadillas and take less than 15 minutes from start to finish. Serve with carrot sticks or your favorite chips for a quick and easy healthy light lunch or dinner.

The only ingredients needed to make these delicious quesadillas are broccoli florets, flour tortillas and shredded cheddar cheese. You can use either fresh or frozen broccoli florets for this. Prepare them first according to the package directions, then chop them into smaller pieces to better fit in the tortillas. Evenly divide the broccoli florets between half of the flour tortillas. Sprinkle shredded cheese on top along with the remaining tortillas. You can use any type of shredded cheese that you would like for these, such as mozzarella or even pepper jack for a more spicy quesadilla. Cook the quesadillas in a medium skillet over medium-low heat. Until both sides are lightly browned and the cheese has melted.

Broccoli and Cheese Quesadillas

Ingredients
  

  • 1 (12 oz.) bag fresh or frozen broccoli florets
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese

Instructions
 

  • Cook broccoli according to the package directions, chop into smaller pieces.
  • Place the broccoli onto four of the flour tortillas. Sprinkle each with 1/4 cup of shredded cheese.
  • Place the remaining flour tortillas on top of the broccoli and cheese. Heat a medium skillet over medium-low heat. Grease with non-stick cooking spray. Cook until quesadilla is lightly browned. Flip and cook until the other side is lightly browned and the cheese has melted.
