Spicy crispy and cheesy, this is the perfect side dish casserole for Easter or Thanksgiving dinner. This corn casserole is so simple and easy to make using only five ingredients. It takes less than 10 minutes to put this casserole together. Then it can easily be made ahead of time by refrigerating the casserole before topping them with the french fried onions. This spicy corn casserole is a favorite of mine for all holiday dinners.

This jalapeno corn casserole is simple to prepare, just combine the cans of corn with softened cream cheese, diced jalapenos and half of the french fried onions. If you want a less spicy corn casserole, you can reduce the amount of jalapenos or leave them out all together. Spread the corn mixture out into a greased baking dish. At this point, you can cover it in foil and refrigerate it until you are ready to bake. Sprinkle the top with shredded cheddar cheese and top with the remaining french fried onions.

Jalapeno Corn Casserole

Ingredients
  

  • 2 ( 15 oz.) cans corn, drained
  • 1 ( 8 oz.) package cream cheese, softened
  • 2 jalapenos, diced
  • 1 container french fried onions, divided
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. In a large bowl, combine drained corn, softened cream cheese, diced jalapenos and 1/2 of the french fried onions.
  • Spread the corn mixture out into a greased baking dish. Top with shredded cheddar cheese. Top with the remaining half of the french fried onions. Bake for 30-40 minutes.
