Cashew Energy Balls

It’s been a while since we shared with you an energy balls recipe. Let’s change that :). For today’s recipe, we have an amazing vegan sugar-free Cashew Energy Balls recipe. As all our energy balls, these are super quick & easy to make meaning that absolute beginners could make them.

On weekends we almost always do a meal prep of some snacks, chia puddings, roasted veggies etc. This recipe was our top pick for next week’s snack meal prep. It’s super healthy, perfect post-workout snack, and the best dessert to bring with you on a go. Not to mention the taste, soft, crunchy, and insanely delicious.

For those of you who are craving for something sweet or need a little bit more energy, this recipe is perfect for you. 🙂 If you are allergic to peanut butter, the best substitutes are cashews butter or almond butter.

Energy Balls
Prep time: 2 min   Cook time: 5 min   Total: 7 min   Servings: 6




 

 

INGREDIENTS

  • 3.2 oz (90 g) of whole Medjool Dates (about 12 small to medium size dates)
  • 1 cup (150 g) of raw cashews
  • 3 tablespoons of peanut butter (unsalted 100% pure)
  • 1/2 cup (40 g) of quick oats
  • about 2-3 teaspoons oat milk

INSTRUCTIONS

  • Add dates to a food processor and process on high until finely ground.
  • Add raw cashews, peanut butter, oats, and grind again until a dough begins to form. If the mixture is too dry add 2-3 teaspoons of non-dairy milk, we used oat milk. There is no need to process the dough until the cashews are finely chopped, we like leaving chunks of cashew, they make the balls taste even better.
  • Form mixture into balls and repeat until no dough remains.
  • Serve and enjoy Vegan Cashew Energy Balls the way you like!

NOTES

  • Try to use soft dates (100% dates without any artificial sugars added). If you are using very dry dates then soak them in the water for about 10-15 min
  • We got 16 vegan cashew energy balls from this mixture.
