What ingredients are in no bake almond butter cookies?

These 3 ingredient no bake cookies require almond flour, almond butter, and maple syrup. You can add vanilla extract and ground cinnamon (both optional ingredients!) for additional flavor.

  • Almond flour. Almond flour has a greater nutrient profile than all-purpose flour and whole wheat flour. It’s rich in vitamin E, manganese, magnesium, phosphorous, and copper. Plus, it has a low glycemic index.
  • Almond butter. Almond butter contains healthy fats and is a great source of plant-based protein. It also gives these cookies their soft and chewy texture.
  • Maple syrup. These cookies are sweetened with maple syrup rather than overly processed/refined sugar.
  • Vanilla extract. I don’t know about you, but I’ve always believed that vanilla extract improves every cookie recipe! Although this is an optional ingredient, it is highly recommended. Add a dash for a subtle hint of vanilla in each bite.
  • Ground cinnamon. Cinnamon is another optional, but recommended, ingredient. It’s loaded with antioxidants and offers anti-inflammatory properties.

How to make no bake almond butter cookies

First, add the almond flour, almond butter, maple syrup, vanilla, and cinnamon to a large bowl. Mix together until the ingredients are fully combined. Then, scoop the cookie dough into 1-inch rounds.

Next, line a plate or pan with parchment paper. Roll the dough into balls. Use a fork to press the balls into cookies. If desired, drizzled melted chocolate chips on top of the cookies.

To melt chocolate: microwave chocolate chips in 30-second intervals, stirring in-between, until nearly all of the chocolate is melted. Continue stirring until smooth. Be careful not to burn the chocolate.

Lastly, place the cookies in the freezer for 5 minutes to set. Enjoy!

  • Use blanched almond flour. There are two varieties of almond flour: blanched and unblanched. Blanched almond flour has a smooth, fine, and fluffy texture. It’s best for desserts and baked goods. Unblanched almond flour has heavier and grittier texture.
  • Any nut butter can be used. The recipe is best with a high-quality natural nut butter. As the recipe states, I used almond butter. However, you can also use peanut butter or cashew butter. Sunflower seed butter is another great option if you have a nut allergy.
  • Add a topping or mix-in. I love to drizzle melted chocolate on top of the cookies, but you can also add chocolate chips, cacao nibs, crushed nuts, or seeds.
  • How to make keto no bake cookies? With one simple ingredient swap, these no bake almond butter cookies become keto-friendly! Just use sugar-free or stevia-sweetened maple syrup instead of traditional maple syrup.
  • Store in the refrigerator. The cookies should be kept in the refrigerator. Additionally, you can store them in the freezer where they will keep well for 1-2 months.

  • 1 cup creamy almond butter
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup chocolate chips, melted (optional)

Instructions

  1. Line a baking sheet, tray, or plate with parchment paper.
  2. Add almond flour, almond butter, maple syrup, vanilla extract, and cinnamon to a large bowl. Mix ingredients until fully combined.
  3. Scoop the dough into 1-inch rounds and place them onto the parchment paper. Roll the dough into balls. Press each ball with a fork to flatten them into cookies. Optional: drizzle melted chocolate on top.
