Easy Potato Croquettes Recipe
Potato croquettes are a classic bistro side dish. To make the best croquettes it is all about the mash. Therefore, you need floury potatoes.
This recipe will show you how to make fluffy mash just like the best, mashed potatoes.
Just add a few dried herbs or cheese to the potato croquettes if you wish and they will taste even better.
These fill you up quite fast so 4 to 5 per person is more than enough. Make them half-sized if you like to serve your family or guests a full plate.
Baked Potatoes Croquettes vs Shallow Fried Croquettes?
If you have time bake these in the oven but if you do not have the time and want to speed it up you can also shallow fry in a skillet.
With shallow frying, you take a skillet and fill it with a small layer of vegetable oil. Heat the oil and pan-fry the potatoes.
This takes only a couple of minutes per side.
Potato Croquettes Ingredients
To make this side dish you need less than 10 ingredients. Have the following ingredients ready when you start:
- Floury potatoes cut into chunks
- Butter
- Egg
- Plain flour
- Breadcrumbs
- Olive oil, for drizzling
- Salt and pepper
Hard cheese (optional).
How To Make Potato Croquettes
Peel and wash the potatoes in cold water. Put in a pot with salted water and bring to a boil.
Turn down to a simmer and leave the potatoes for 15 minutes or until tender.
In the meanwhile, preheat the oven to 400℉ to toast the breadcrumbs. This will help brown the croquettes in the oven.
Sprinkle the breadcrumbs on a baking tray and spray with cooking spray. Toast the breadcrumbs for 2-3 minutes.
Take out of the oven and set aside to let the breadcrumbs cool.
Drain and mash with a fork or a ricer. Beat in the butter first and add 1 egg yolk.
If you want to add cheese to your croquettes you can add it now and season with salt and pepper to taste.
Leave to cool and firm up so you can shape it into croquettes this takes about 5 minutes
Shape the mixture into 10 croquettes. If you have time put them in the fridge for 15 minutes to firm up.
They will be easier to handle when you coat them with eggs and breadcrumbs.
Coat the croquettes:
- Flour – put the flour, the egg white, and the breadcrumbs into three separate bowls or shallow plates
- Egg – beat the egg white loose. First, dip a croquette in the flour and pat off any excess
- Breadcrumbs – then coat in the egg before dipping it in the breadcrumbs. Transfer to a baking tray. Repeat for the remaining croquettes
Preheat the oven to 375℉/190℃. Drizzle the croquettes with oil, and bake for 20 minutes or until golden brown.

To Add Cheese Or Not?
If you are a cheese lover you can definitely add cheese to your croquettes. Add about 50 gram/1¾ oz to the potato mixture.
If you do add cheese, make the croquettes smaller in size.
These croquettes already fill you up pretty well without cheese so by adding cheese you want a smaller croquette.
You can use e.g.:
- Cheddar
- Gruyere
- Emmental
- Gouda
Can You Freeze Cooked Croquettes?
Yes, you can freeze croquettes. You can freeze them in two ways:
- Uncooked – when you have prepared the whole croquette you can freeze them before putting them in the oven or pan-fry. Store them in a freezer friendly bag or container
- Cooked – when you have leftover croquettes let them cool completely. Transfer them to a freezer-friendly container
Reheat Potato Croquettes
When you reheat potato croquettes preheat your oven to 400℉/200℃. Reheat frozen croquettes directly from the freezer for about 7 minutes without thawing them first.

You can serve these croquettes as a snack on its own as a side dish you can serve it with:
- Chicken schnitzel
- Bacon burger
- Beef bourguignon
- Grilled spare ribs
- Slow cooked pork chops

- 70-gram panko breadcrumbs (⅔ cup)
