EASY OLIVE OIL CREPES

This delicious recipe for the easiest olive oil crepes ever comes from my friend Hilda at iwanttocookthat.com. You make the batter in the blender and it can be left in the fridge overnight for an easy and quick breakfast the next morning or even a tasty dessert. You can serve the crepes simply with a drizzle of honey and a squeeze of lemon or spread on some of your favourite jam, a smear of Nutella or fill with berries and cream.

What Ingredients Do I Need?

You only need a few simple pantry staples for these simple crepes.

  • Eggs – Large-sized.
  • Milk – 2% works best for this recipe.
  • Flour – A white all-purpose flour works best.
  • Extra virgin olive oil – A mild, fruity oil will work best.
  • Vanilla sugar – If you don’t have vanilla-flavored sugar any white sugar will work.

How Many Crepes Will This Recipe Make?

This recipe will make about 9-10 crepes so budget about 2-3 crepes per person. While I’m cooking the crepes I like to keep the cooked crepes warm in the oven until they are all done.

What To Serve With The Olive Oil Crepes

Serve the crepes with fresh lemon juice and powdered sugar or berries and whipped cream. They are also delicious filled with Nutella & a dollop of whipped cream.

Equipment

  • Blender

Ingredients
  

  • 3 Large eggs
  • 1 Tbsp vanilla sugar
  • A pinch of salt
  • 3 Tbsp mild extra virgin olive oil
  • 1 1/2 Cup 2% milk
  • 1 Cup white flour
  • More olive oil for cooking

Instructions
 

  • Toss all ingredients into the blender and blend for about 20 seconds until the mixture is smooth. Leave the batter for 15 minutes at room temperature if you are making them right away or cover and leave in the fridge for the next morning.
  • Heat up a crepe pan (or non-stick frying pan) and add a tsp of olive oil. Pour in approx 3/4 cup of batter in your pan and swirl the batter around the pan until the batter is evenly spread. When the crepe just begins to have some browning, use a spatula to loosen and flip the crepe and cook for another 30 seconds or until it's done.
  • Continue on to use all the batter.

  1. If you were to use these in savoury applications, would you omit the sugar, cut it in half or leave as is? I know that sugar isn’t just about sweetness, it also adds moisture, structure and cuts the flour taste. Thank you.

    1. Hi Monika! I would still leave the sugar in or cut it in half if you really wanted to. You don’t taste it in the crepes at all so they’re still lovely for savory dishes. Please let me know if you try them.
