It’s camping season! 10 years ago, I would have never believed I’d be camping. I was afraid of a 1 mile hike. Outdoor activities as a whole did not appeal to me. Not even a little.

I used to think this was because “Ew, gross, bugs and not showering,” which it was def in part because of that, but also in large part because I didn’t trust myself to be capable of something like that. People who go camping and enjoy all the outdoor activities that come with camping are fit people. I didn’t consider myself to be a fit or athletic person. But while we were living in Cape Town, I decided to push my body, to actually test it and see what it could do. And I was pleasantly surprised.

Now, I love camping. We usually go 3 or 4 times every summer and I’ve loved getting to explore new corners of my state and I so look forward to the ritual of setting up camp, reading by a lake while Husband fishes, aaaannnndddd coming up with new ideas for things to cook over a fire. Enter: the Camping Cobbler.

This “cobbler” has just four ingredients: strawberries, marshmallows, chocolate, and graham crackers. Think chocolate covered strawberries meets s’mores. Right now, you totally get my vision and are 100% on board, or you think I’m nuts. If you fall into the latter camp, I very much encourage you to give this creation a shot.

And when you do give it that shot, make it with Dandies marshmallows. I’ve been looking for healthy alternatives to our camping favorites (hot tip: Costco has nitrate free lil smokies!) and these marshmallows were a godsend. They’re made with all natural ingredients, gluten free, no corn syrup, and they’re even vegan. You know Husband and I eat our fair share of meat… but our favorite camping buddies happen to be vegans, so now we all get to roast marshmallows over the campfire.

So back to this Campfire Cobbler. Literally throw all the ingredients into a foil pan except the graham crackers, wrap with foil, and throw over the fire. Let everything get nice and melty, crumble some graham crackers over the top, and EAT UP. You’ll feel so fancy. I promise.

Campfire Cobbler

Yield: 4 servings

Ingredients
 

  • 2 cups Dandies marshmallows, about 15
  • Half a chocolate bar
  • 12 strawberries, sliced into quarters
  • 3 graham crackers

Instructions
 

  • Add the marshmallows, strawberries, and chocolate to a foil container. Wrap the container with foil and place over your campfire.
  • Once the marshmallows and chocolate are melty, remove from heat. Crumble the graham crackers over the top of the marshmallow/chocolate/strawberry mixture.
