What You Need For This Recipe

This is a very breakfast recipe. You need several ingredients so put the following ingredients on your grocery shopping list:

  • Tortillas – for this recipe, we use small 5-inch tortillas
  • Eggs – medium or large size eggs
  • Sausages – made with ground pork sausages
  • Small onion – finely chopped
  • Graded Cheddar cheese – this recipe contains two types of cheese grated cheddar
  • Mozzarella – use grated hard mozzarella
  • Scallion – finely slice the scallion
  • Seasoning – season the meat with enchilada seasoning
  • Parsley – finely chopped fresh parsley to garnish

How To Make Breakfast Enchiladas

  1. To make this recipe preheat a skillet and, in the meantime, take the skin of the sausages. Put the sausages in the pan.
  2. Break up the sausage meat in the hot skillet until the pink is gone. Finely chop the onion, add to the sausage meat, and stir it through until the onion is nice and soft.
  3. Sprinkle the enchilada seasoning on the sausage mix and stir to combine the meat and enchilada seasoning together. Take the sausage mix out of the skillet and put it in a bowl then set it aside.
  4. Break the eggs into a bowl and whisk the eggs. Scramble the eggs in 2 or 3 minutes and add to the skillet with the sausage fat. Return the pork meat mix to the pan and combine with the eggs.
  5. Take a small tortilla and fill it with ⅙th of the sausage mix. Roll up the tortilla and put it seam-side down in a baking dish.
  6. Repeat for the other 5 tortillas. Sprinkle the shredded mozzarella and cheddar cheese on top of the filled tortillas.
  7. Preheat the oven to 400℉/200℃ and put the baking dish in the oven for 10-12 minutes or until the cheese has melted and is bubbling. Take it out of the oven.
  8. Garnish the enchiladas with finely sliced scallion and chopped fresh parsley. Serve immediately.

Can You Make Breakfast Enchiladas Ahead?

Yes, you make breakfast enchiladas ahead of time. Make the sausages and egg mix. Put the egg mixture in the tortillas and put them in an oven dish. Cover the oven dish with foil and store it in the fridge overnight.

You have several ways to store these enchiladas. Let them cool completely first before storing them.

  • Refrigerator – if you plan on serving the leftover enchiladas within two days you can store them in the fridge. Put them in an airtight food container
  • Freezer – if you want to keep them longer you can store them in the freezer. Either put them in a freezer bag or in a freezer-friendly airtight and store them for up to 2 months

How To Reheat Breakfast Enchiladas?

To reheat your enchiladas you have several options, take a look:

  • Oven – you can reheat the breakfast enchiladas in the oven dish. Preheat your oven to 350℉/175℃ and heat them for 10 minutes or until warm
  • Air Fryer – if you have only a couple of enchiladas left warm them in the Air Fryer. Put the enchiladas in a cake pan and preheat the Air Fryer to 325℉/163℃ for 3 minutes. Warm for 7 minutes or until warmth through
  • Cast-iron skillet – preheat the cast-iron skillet to medium. Put the enchiladas in the skillet and let them warm through. This can take about 10 minutes
  • Microwave – put the enchiladas in a microwave-safe dish. Cover with plastic wrap and heat for 1 minute. Check how warm they are and heat for 30 seconds bursts

Ingredients

  • 6 small tortillas
  • 4-5 large eggs
  • 2 pork sausages
  • 1 small onion
  • 1 cup shredded Cheddar cheese
  • 1 scallion
  • ½ cup shredded mozzarella
  • ½ tablespoon enchilada seasoning
  • Parsley

Instructions

  1. Take the skin of the sausages. Break up the sausage meat in a hot skillet stir until the sausage meat is browned
  2. Finely chop the onion and add to the sausage meat. Stir until the onion is nice and soft
  3. Sprinkle the enchilada seasoning on the sausage mix. Stir to combine the meat and seasoning
  4. Take the sausage mix out of the skillet and put it in a bowl then set aside
  5. Break the eggs in a bowl and whisk to combine. Scramble the eggs in the skillet with the sausage fat
  6. Return the pork meat mix in the pan and combine with the eggs
  7. Take a small tortilla and fill with 1/6th of the mix. Roll up the tortilla and put it seam side down in a baking dish. Repeat for the remaining 5 tortillas
  8. Sprinkle the shredded mozzarella and cheddar cheese on top of the tortillas
  9. Preheat the oven to 400℉/200℃ and put the baking dish in the oven for 10-12 minutes or until the cheese has melted and is bubbling
  10. Garnish the enchiladas with finely sliced scallion and chopped parsley
  11. Serve directly
