Mocktail Cucumber Mint Cooler

This Cucumber & Mint Cooler is the perfect mocktail for a hot day (sorry if you are somewhere in the depths of winter right now). Here in Dubai we are enjoying the warm, yet not sweltering, weather. With temperatures typically around 23-26°C (around 75-80°F) and bright sunny days.

To be honest, I’d happily enjoy this mocktail during the winter. It’s so much more interesting than just drinking plain old water. And it’s pretty healthy to boot. Refreshing lemon, sweet mint and cucumber and soda water. I also use sweetener instead of sugar to add a bit of extra sweetness to cut through the tartness from the lemon. It only comes in at around 20 calories per serving too – winner!

Cucumber Mint Cooler

Now, I don’t want to lead you astray, since you are looking at a pretty healthy mocktail recipe. But you could absolutely add some gin or vodka to this (I have, myself, tried it with gin). It is absolutely beautiful. A perfect sundowner cocktail.

How to prepare the Cucumber & Mint Cooler Mocktail

This cucumber & mint mocktail takes mere minutes to put together. Simply roughly chop some cucumber and throw it in a blender with mint leaves, sweetener and lemon juice. When you serve pour the mixture into a glass with some ice, top with soda water and stir. The recipe below is for one person but you can easily scale up as you need.

You can make the cucumber & mint cooler mixture in advance and then serve as you like. Perfect if you are having guests round but don’t want to spend the evening in the kitchen. The mixture will live happily in the fridge for up to 3 days, so you could make enough to last you a few days and treat yourself as you feel the urge.

Refreshing, light and healthy, this Cucumber & Mint Cooler is the perfect mocktail to relax on a warm day. Fresh, sweet cucumber and mint is offset with tangy lemon, mixed with soda water.

Ingredients

  • 50g cucumber, sliced, plus an additional few slices for garnish

  • 5 mint leaves, plus extra for garnish

  • 1 tsp powdered sweetener

  • 2 tbsp lemon juice, freshly squeezed

  • 200ml soda water / club soda

  • ice

Directions

  • Combine the cucumber, mint, lemon juice and sweetener (see note 1) and blend using a stick / immersion blender.
  • Fill a glass half full with ice cubes (see note 2). Pour over the cucumber mix.
  • Top the glass with soda water and swirl to combine using a cocktail mixer (or just a straw). Delicious!

Notes

  • You can use normal sugar in the place of the sweetener if you prefer
  • I’ve made this with crushed ice which also works well. (Any excuse to use that big machine that has no other role but to take up worksurface space for 360 days per year).
