Cheesy Refried Bean Quesadillas

Quesadillas are great for a quick meal, and you can customize them however you want. From the type of cheese to different kinds of meats and veggies, the possibilities are endless. For this quesadilla, I decided to make them simple with very few ingredients needed. A classic cheesy refried bean and cheese quesadilla. They are slightly spicy with hot sauce mixed into the refried beans. And cheesy with shredded cheddar cheese to top the quesadillas off. It only takes about 5 minutes to put these quesadillas together and you have a quick and easy lunch or dinner in less than 20 minutes.

Only four ingredients are needed to make these quesadillas. Just flour tortillas, one can of refried beans, salsa and shredded cheddar cheese. To prepare the bean mixture, heat a can of refried beans in a medium microwave safe bowl. Heat the beans until they are smooth, stir in salsa. Lay half of the tortillas down flat, and evenly spread the bean mixture over each tortilla. Sprinkle shredded cheddar cheese on top of the bean mixture, then place the remaining half of the tortillas on top. Heat a skillet over medium heat lightly greased with non-stick cooking spray. Cook the quesadillas for about 3-4 minutes on each side, until both sides are lightly browned and the cheese has melted.

Cheesy Refried Bean Quesadillas

Ingredients
  

  • 12 small flour tortillas
  • 1 ( 15 oz.) can refried beans
  • 1/4 cup salsa
  • 1 1/2 cups shredded cheddar cheese

Instructions
 

  • Heat refried beans in the microwave until smooth. Stir in salsa.
  • Lay 6 flour tortillas down flat. Spread 1/6 of the bean mixture over each tortilla. Sprinkle 1/4 cup of shredded cheese on top. Top with the remaining tortillas.
  • Heat a skillet over medium heat and lightly grease with non-stick cooking spray. Cook quesadillas for 3-4 minutes on each side, until lightly browned and the cheese has melted.
