To make these delicious barbecue chicken quesadillas you need several ingredients. Have the following ingredients ready when you start this recipe:

  • Tortillas – use medium to big-size flour tortillas
  • Chicken – you can use whole chicken or rotisserie chicken
  • Bell red pepper – choose sweet red bell pepper
  • Red onion – finely chop
  • Cheese – you can choose your favorite cheese like grated mozzarella
  • Smoked paprika – to give that BBQ flavor
  • Seasoning – flavor with quesadilla seasoning or use chili powder
  • Sauce – to enhance the BBQ flavor add homemade BBQ sauce

How To Make BBQ Chicken Quesadillas

  1. Start with the chicken and shred (leftover whole) chicken in a large bowl. You can also boil a chicken breast in some chicken stock and pull it apart into shredded chicken.
  2. Then finely dice the red onion and set it aside. Also finely dice the sweet red pepper into small cubes.
  3. Add the onion, sweet pepper, quesadilla seasoning, smoked paprika, and homemade BBQ sauce to the bowl. Stir until everything is evenly combined.
  4. Take a tortilla and spray one side with cooking spray. If you do not have cooking spray, brush the tortillas with olive oil. Put about ½ cup of the BBQ chicken mixture on each flour tortilla.
  5. Spread it evenly over half of the tortilla. Sprinkle the chicken mixture with the shredded mozzarella cheese. Fold the tortilla and put it on the baking tray.
  6. Repeat for the remaining tortillas. Preheat the oven to 400℉/200℃ and bake the quesadilla for 10 minutes.
  7. Then turn the, to cook for another 10 minutes or until the outside is brown and crispy, the filling has heated through, and the cheese has melted.
  8. Cut each quesadilla into 3 equal-sized wedges. Your BBQ chicken quesadillas are ready to serve.

BBQ Chicken Auesadillas

Serves: 2 Prep Time: 5 minutes Cooking Time: 20 minutes

Try these BBQ chicken quesadillas for lunch or dinner. Made with rotisserie chicken or shredded chicken and (homemade) BBQ sauce.

Ingredients

Instructions

  1. Shred the rotisserie chicken into a large bowl. Finely dice the red onion and the sweet red pepper
  2. Add the onion, sweet pepper, quesadilla seasoning, smoked paprika, and BBQ sauce to the bowl with. Stir until everything is evenly combined
  3. Spray one side of a tortilla with cooking spray (note 1)
  4. Place about 1/2 cup of the BBQ chicken mixture on each tortilla and spread it evenly over one half of the tortilla
  5. Sprinkle the chicken with the shredded mozzarella cheese
  6. Fold the tortilla and put it on the baking tray. Repeat for the remaining 3 tortillas
  7. Preheat the oven to 400℉ and bake the quesadilla for 10 minutes. Then turn the, to cook for another 10 minutes or until the outside is brown and crispy, the filling has heated through, and the cheese has melted
