A couple Januarys ago, we did a month of low carb recipes. I know a lot of people who follow the Keto diet and love keto-friendly meals, but for me, it was too much meat and too few … well, carbs. I love bread. And pasta. And rice. One of the dinners we made and fell in love with, though, was this Egg Roll In A Bowl recipe.

When I make it now, which I do quite a bit, I serve it over rice. It feels like more of a complete and filling meal this way.

This recipe post doesn’t show it that way because I wanted to post it as a Keto-friendly dinner idea, in case you’re trying Keto this January.

Our recipe is a little different than some others you’ll see because those ones tell you to buy bagged coleslaw mix.

This one requires that you chop the cabbage and carrots yourself, but it’s worth it because the carrots are a highlight in this. If you use the coleslaw mix, you hardly get any carrots and you really miss the natural sweetness they bring to Egg Roll In A Bowl.

In a large pan, brown the turkey. Drain the meat and set it aside.

Peel and chop the garlic and ginger. Chop the green onions. Set aside half the greens.

Add the garlic, ginger, remaining green onions, and sesame oil to the pan. Cook about one minute.

Chop the cabbage into slices. Peel the carrots. Then, using the vegetable peeler, peel carrot strips. Chop those in half.

Add the cabbage and carrots to the pan. Cook them down.

Honestly, don’t worry if you put them in the pan and it’s overflowing. They’ll cook down quickly and make room.

Stir in the soy sauce, chili paste, and vinegar. Add the meat back in. Stir until combined.

How To Serve Egg Roll In A Bowl

How you’re going to serve this egg roll in a bowl recipe is based on how you are eating.

If you’re making this because it looks delicious, you can serve it over rice, like we do. Just make your rice in a rice cooker, put it in bowls, and layer this on top.

If you’re making this because you are cutting carbs, use this egg roll in a bowl recipe as a filling for lettuce wraps. Just grab and wash Romaine lettuce, then fill each with a scoop or two of egg roll in a bowl. It’s so good that way.

Can you use bagged coleslaw?

So, I mentioned this above, but in case you glanced over that quickly, the difference between our recipe and most other egg roll in a bowl recipes in that ours uses fresh cabbage and carrots.
Most other recipes just use bagged coleslaw, which is just green cabbage and carrots. Some will add red cabbage as well.

The main difference is that bagged coleslaw mix is already chopped up for you. So that saves you a lot of time. But, you’re paying for this convenience, and a bag of coleslaw will cost you more than a head of cabbage and a bag of carrots will.

And since I’m super frugal all the time, I’d rather spend less and chop ingredients myself. Plus, the larger slices of carrots taste so much better in this recipe than the small carrot shreds do.

Can you use other meat in Egg Roll In A Bowl?

We use ground turkey in our recipe because it adds more flavor than ground chicken does, but it’s still a healthy, lean protein.

You can also use ground pork (which is traditionally in egg rolls) or ground beef in your recipe. If you’re concentrating on keeping this keto-friendly, both of those proteins are 0 carbs.

If you’re concentrating on Weight Watchers, chicken and turkey are ZeroPoint foods, but beef and pork are not. So stick with the first two.

Is Egg Roll In A Bowl Keto-Friendly?

If you’re looking for Keto-friendly recipes, egg roll in a bowl is a good one.

A half of a head of cabbage ends up being about 4 cups. One cup of cabbage is about 2 carbs, and you’re eating about 3/4 of a cup per serving of this.

Ground turkey has no carbs, and the total for the green onions in this is only 3 carbs.

The only trouble is the carrots, which are about 6 carbs each. They’re not as starchy as root vegetables tend to be, but they are high in carbs compared to other vegetables.

Carrots are so delicious in this though, and honestly my favorite part of the entire dish, so I think it’s worth the carbs (although I also don’t generally count carbs, so I’m not the authority here).

Is there a Weight Watchers Egg Roll In A Bowl recipe?

While egg rolls in a bowl is considered a keto-friendly recipe and is made by a lot of people who are following a Keto diet, I would actually consider it a recipe that’s great if you’re on Weight Watchers too.

If you’re following the WW Freestyle Plan, vegetables and ground turkey are all ZeroPoint foods. So all you need to count points for are the sauces.

If you eat this in lettuce wraps, that lettuce is also going to be zero points, so this is a really filling meal for very, very few points.

If you serve this over rice, you will have to count the rice in your point total.

  • 1 pound ground turkey
