Spicy seasoned chicken with tender onions and bell peppers wrapped up into flour tortillas for easy juicy chicken fajitas. I love to make chicken fajitas as a nice change for taco night. The bell peppers and the sliced onion cooked with the spicy chicken add more flavor instead of a basic chicken taco. To make these fajitas even easier, instead of cooking the meat and veggies on the stove-top, they are baked until the chicken is tender and juicy. Serve the mixture in flour tortillas, or if you would rather a gluten-free meal, replace the flour tortillas for corn tortillas.

To save on dishes, all of the ingredients are mixed together in the same baking dish that it bakes in. Meaning one dish is used and there is less to clean up. The chicken is sliced into long thin strips and placed into a greased baking dish. One onion and three bell peppers are also sliced into long strips and mixed with the chicken in the baking dish. Any bell peppers will work for this, I usually use red and orange. Mix the chicken and veggies with olive oil and a packet of taco seasoning until they are fully coated in the mixture. Bake until the chicken and veggies are tender. Serve the mixture over tortillas.

Baked Chicken Fajitas

Ingredients
  

  • 2 pounds chicken breast
  • 1 small onion, sliced
  • 3 bell peppers, sliced
  • 2 tablespoons olive oil
  • 1 ( 5 oz.) packet taco seasoning

Instructions
 

  • Preheat oven to 400 F. Slice chicken into thin strips. Place the chicken into a greased baking dish.
  • Mix the chicken with sliced onion, sliced bell peppers, olive oil and taco seasoning. Bake for 25-30 minutes. Serve over tortillas.
