People with bloating or digestive issues might benefit from soaking beans. If you do have to soak beans, you can do so overnight or for a few hours during the day before cooking.

How To Cook Black Eyed Peas In Instant Pot
1) Rinse beans in warm water.
2) Set the instant pot to saute then add oil in the pot of the instant pot. Add in minced garlic and chopped onions then saute for a few minutes.
3) Add paprika, seasoning, ginger, and cayenne pepper then cancel the saute function of the instant pot.
4) Add broth to the instant pot and scrape to deglaze the instant pot then add salt, washed beans, and bell peppers. Stir and cover the instant pot with the lid and set the valve to ‘sealing’ position.
5) Set the instant pot to manual pressure cook high for 35 minutes and when cooking time is done, do 10 minutes of natural pressure release.
6) Once the instant pot is depressurized, open the lid and stir the beans.
This is the part where I mash some of the beans for creamy sauce. love it!

How long to cook black eyed peas in instant pot: For this recipe, with the recommended beans to water ratio, it takes 35 minutes. For firmer texture, it takes 30 minutes of pressure cooking with the same water ratio.

Equipment
- Instant pot pressure cooker
Ingredients
- 3 cups Black eyed peas
- 1 large Bell pepper chopped
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 teaspoons Smoked paprika
- 1 teaspoon Cayenne pepper or to taste
- ½ teaspoon Black pepper or to taste
- 6 cups Broth or Water chicken or vegetable broth if vegan
- 2 Seasoning cubes (stock cubes) If not using broth
- 1 Bay leaf Optional
- ¼ cup Oil Vegetable, sunflower, olive oil or coconut oil
- 2 cups Ham or Bacon or smoked turkey Optional
- Salt to taste
Instructions
- Rinse beans in warm water.
- Set the instant pot to saute then add oil in the pot of the instant pot. Add in minced garlic and chopped onions then saute for few minutes.
- Add paprika, seasoning cubes, black pepper and cayenne pepper, then cancel saute function of the instant pot.
