I absolutely love sneaking in ingredients to my baked goods that you wouldn’t expect to make a deliciously sweet dessert! I have used sweet potato, zucchini, carrots, and more but my absolute favorite to add in are chickpeas. I know it sounds weird, but trust me the creations always turn out incredible! And these Fudgy Vegan Chickpea Brownies are no different. Besides making for a perfectly fudgy brownie, the chickpeas in this recipe also add a nice protein boost and lower the amount of flour needed. These brownies are a super healthy dessert option and the main ingredient is chickpeas, so you’re basically eating a salad. At least thats what i told myself when I ate the whole batch in two days!

The main ingredient in this recipe is chickpeas, as you can probably tell from the name. Chickpeas have a pretty neutral flavor so you won’t even realize that they are there, but they provide a nutritious and delicious base for this recipe! They also make the brownies incredibly fudgy. Next, almond butter and tahini is used. Tahini is ground sesame seeds, but if you don’t have tahini you could just use entirely almond butter. You can also switch it up with basically any other nut butter you want, peanut butter would add a whole new delicious flavor! The only flour used is a tiny bit of almond flour and maple syrup is used to sweeten, so the brownies are grain, gluten, and refined-sugar free. Lastly, no eggs or dairy are used in this recipe, making the brownies completely vegan as well!

How to make these Fudgy Vegan Chickpea Brownies!

  1. Set the oven to 350 degrees.
  2. Combine chickpeas, almond butter, tahini, maple syrup, vanilla extract, and almond milk in high speed blender or food processor until smooth.
  3. Once smooth add in the remaining ingredients, besides chocolate chips, and combine again until smooth.
  4. Stir in the chocolate chips.
  5. Pour the batter into a greased or parchment paper lined 8×8 baking tray.
  6. Top with extra chocolate chips (optional, but highly recommended!) and a sprinkle of salt.
  7. Bake for 15-18 minutes, or until a fork or toothpick comes out clean.
  8. Let cool, cut into squares, and enjoy!

Another reason why i love this recipe, as if there wasn’t enough already, is that it is honestly one of the easiest, if not the easiest recipe i make! You will have a dessert ready in 30 minutes or under! You literally just throw all the ingredients in a high speed blender or food processor, turn it on, and your batter is made. It also makes for very little cleanup because it only requires a blender and one bowl or just a food processor. Literally what more could you ask for?!
