A big heartfelt thank you to all my readers for all the encouragement, suggestions, comments, queries and messages. God bless you all abundantly. Here is an amazing recipe for chicken popcorn to celebrate.

Everyone loves KFC style Chicken Popcorns and fried chicken, to recreate the same is little difficult. I have tried to perfect my Chicken Popcorn recipe over the years by mixing /matching ingredients. Please follow the steps carefully for a perfectly coated and crispy batter. However, making chicken popcorn at home can get a little messy for the beginners. But, once you are familiar with the coating process, you will enjoy making chicken popcorns. Frying is another factor where you need to be careful. Do not reduce the temperature while frying as it may absorb oil and turn greasy.

Ingredients:

Chicken Breasts: 300 gms
Ginger Garlic paste: 1 tsp
Pepper powder: ½ tsp
Paprika/ Kashmiri chili powder: ½ tsp
Salt: to taste
Thick Butter milk: 1 cup
Lime Juice: 2 tsp
Egg: 2 nos.
Milk: ½ cup
Maida/ Plain Flour: 2 cups
Corn Flour: 1 cup
Rice Flour: 2 tbsp
Oats: 2 tbsp
Pepper Powder: 1 tsp
Paprika or Red chili Powder: 1 ½ tsp
Garlic Powder: 1 tsp
Onion Powder: 1 tsp
Dried Oregano: 1 tsp
Dried Thyme: ½ tsp
Salt: ½ tsp
Baking Soda: 1 ½ tsp
Oil: for frying

Method:

Clean, wash and pat dry the chicken breasts. Cut into bite sized pieces. Marinate the chicken pieces with pepper powder, Paprika or Kashmiri chili powder, ginger garlic paste, salt, lime juice and thick butter milk. Refrigerate the marinated chicken for 4 -6 hours or overnight for better results.

Beat the eggs with little salt and Pepper powder and add milk, gently beat to combine and keep aside. In a wide bowl, mix the Plain Flour (Maida), Corn Flour, Rice Powder, Oats, Pepper Powder, Baking Soda, Chili or Paprika powder, Oregano, Thyme, Garlic Powder, Onion Powder and salt. After mixing the ingredients, divide the flour mix into 2 equal parts and keep in separate bowls.

Take out the chicken pieces and coat with flour mix.  Alternately, you can put the flour mix in a cover and put the chicken pieces in it and shake it for coating evenly. (Next step is a little messy, but you can ask someone, preferably your kids to help you). Shake off excess flour and dip each piece into the egg batter and again dip into the second bowl of flour batter to coat nicely. Coat all the chicken pieces this way and keep aside.

Heat oil in a pan and once piping hot, deep fry the chicken pieces till you get a golden brown colour on both sides.

Take care not to reduce the temperature. When the temperature drops, the chicken will absorb oil and will turn greasy. Drain the fried Chicken Popcorns to a tissue paper and serve hot with Cheesy dip or Tomato ketchup.

Tips:

  • Avoid overcrowding the pan for better results.
  • Always keep the temperature on high. Reducing the temperature will result in greasy Chicken Popcorn.
  • If you are serving as starters, fry just before serving.
  • Garlic Powder and Onion powder are available in supermarkets.
  • Buttermilk helps to tenderize the chicken.
  • Cheesy dips, sweet chili sauce or Tomato Ketchup are best for Chicken popcorns.

Prepare this crispy, tender Chicken Popcorns and enjoy with friends and family. I would like to hear from you, how it came out for you. Please share or put in your comments to motivate me to bring you more delicious and wonderful homemade recipes. God Bless!!
