The Best Grilled Ribs
I love grilled spare ribs but only if they are ultra-soft and fall off the bone. No bigger disappointment than tough ribs.
You know the ones that are dry and hard ribs. It is really easy to prevent but you have to know how to do it.
And you do not have to put them on the grill all day.
Two things make great ribs.
- Cooking – when you cook your ribs before you put them on the grill they get a head start and help get soft fall of the bone ribs. Instead of cooking them in a pot with water, you can also make ribs using your pressure cooker.
- Marinade – you need a good marinade that helps soften the meat. That way your ribs are “cooking” while they marinate.
Grilled Spare Ribs Ingredients
To make this easy grilled spare ribs recipe you need less than 4 ingredients. Really? Really! Only 4 ingredients and a barbecue.
Make sure you get the following ingredients:
- Pork ribs
- Orange juice
- Sweet soy sauce
- Hot sauce
How To Grill Spare Ribs
To make these BBQ pork ribs start by removing the membrane from the backside of the ribs. You can use a piece of paper towel and grab the skin and pull it.
This is important as it will allow the ribs to marinate better. In the meanwhile, heat your BBQ and let it go up to 300℉.
Put a pot with water on the stove and bring to a boil. Add the ribs to the pot and boil for 20 minutes.
Drain the ribs and pad them dry with a paper towel. Take a small bowl and add the soy sauce, then add the orange juice and stir before adding the hot sauce.
Then take a brush and baste the marinade on the meat side of the ribs. Put the ribs on the grill meat side up.
Close the grill top and baste the meat after 5 minutes. After another 10 minutes turn the ribs, let them grill for 5 minutes, and brush the bone side.
If you use a charcoal grill, put the ribs over indirect heat so they will not get burned.
Keep on turning every 5-10 minutes for the next 40 minutes and baste the ribs with marinade.
Take the pork ribs from the barbecue and cut up the ribs or serve the whole rack.
How To Remove The Membrane From Pork Ribs?
To remove the Membrane from your spare ribs you need to follow the next steps:
- Slide a dinner knife at one end of the rack under the membrane and over a bone
- Lift the membrane with the knife and loosen it until it tears
- Then grab the edge of the membrane with a paper towel and pull it off
- When the membrane doesn’t come off in one piece it’s no problem. You can take it off in smaller pieces
How Do You Know When Spare Ribs Are Done?
The best way to determine whether your spare ribs are done is to check the temperature of the inside of the ribs.
When the temperature is between 190℉ to 203°F, the collagens and fats have melted and the meat is tender and juicy.
When the meat is still very bouncy you know the meat has to stay on the BBQ a while longer.
You can also check to see if one of the bones can be removed easily.
Why Do You Use Orange Juice In The Marinade?
Orange juice contains acidity and this helps to make the meat soft and tender because acidity breaks down the enzymes in your pork ribs. Uou need a bit of acidity.
Adding orange juice or some lime juice makes the meat more tender.
Other Ways To Tenderize Ribs
Instead of adding orange juice to your marinade, you can also soak your spare ribs in vinegar.
Leave the ribs to soak in vinegar for 3-5 hours and put them in the fridge. Just like orange juice vinegar contains acid which tenderizes the meat.
Do You Need Sugar In Your Spare Ribs Marinade?
If you like sweet soy ribs you can. In this recipe, I use sweet soy sauce that already contains sugar.
If you have regular soy sauce or want really sweet pork ribs you can add 1 to 2 teaspoons of sugar to your marinade and stir it through before applying to the meat.
Do You Cook Ribs Meat Side Up Or Down?
When grilling ribs on the barbecue put the meat side up for about 90 percent of the time.
When you turn the ribs do not leave them longer than 5 minutes meat side down as the heat dries the meat.
Turn your grill down when the ribs are grilling too fast or are almost done.
Never grill over direct heat. This will blacken the outside of the ribs when the meat is not yet done grilling.

Ingredients
- 2 lb racks baby back pork ribs
- ¼ cup fresh orange juice
- ¼ cup sweet soy sauce
- 1 tablespoon hot sauce
Instructions
