Kale and Brussels Sprout Salad
Kale and shaved Brussels sprouts are rubbed with apple cider vinaigrette and tossed with apples, Parmesan cheese, and sunflower seeds.

Ingredients
- Apple Cider Vinaigrette:
- 1/2 tsp Dijon mustard
- 1 tsp honey
- 1 TBSP apple cider vinegar
- 1/2 TBSP water
- 3 TBSP peanut oil
- dash salt
- pinch pepper
- Salad:
- 2 cups stem removed and chopped kale
- 2 cups shaved Brussels sprouts
- 1 gala apple, cored and sliced
- 2 oz Parmesan cheese, shaved
- 1/4 cup sunflower seeds

Directions
- Make the dressing by combining all the Vinaigrette ingredients in a jar and shaking well.
- In a large bowl combine the kale, brussels sprouts, and 3 TBSP of dressing. Massage the dressing into the greens.
- Add in the apple and sunflower seeds and toss to combine. Top with shaved Parmesan cheese.
- Serve salad with extra dressing on the side.
