Cheesecake is my favorite dessert. But preparing a full cheesecake, takes a while to bake. So instead, I made smaller versions of a cheesecake in half the time. Each cheesecake bite is topped off with some cherry pie filling, ensuring that every piece gets a bite of cherry. These cherry cheesecake bites are a pretty and easy way to serve cheesecake at a party, because there is no need to worry about slicing the cheesecake into even pieces.

The crust for these cheesecake bites use vanilla wafers, just place one vanilla wafer into each paper lined muffin cup. The cheesecake batter is a simple cream cheese, sugar and egg mixture. Evenly divide the cheesecake batter between the cupcake tins. These cheesecake bites won’t take as long to bake as a regular sized cheesecake. They need only about 25-30 minutes to cook. They will also cool a lot faster, once they are completely cooled top each one with about a tablespoon each of the cherry pie filling. Keep these cheesecake bites refrigerated until serving for up to one week.

Cherry Cheesecake Bites

Ingredients
  

  • 2 ( 8 oz.) packages cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 12 vanilla wafers
  • 1 can cherry pie filling

Instructions
 

  • Preheat oven to 350 F. Line a muffin pan with 12 cupcake liners. Place one vanilla wafer into each cup.
  • In a large bowl, beat softened cream cheese with granulated sugar, eggs and vanilla extract with a hand mixer until creamy.
  • Evenly pour the cheesecake batter over each vanilla wafer. Bake for 25-30 minutes. Let cool. Top each cheesecake bite with cherry pie filling.
