The Best Fruit Brownies

Brownies are one of the most popular desserts in the world. Almost everyone knows the original recipe. But how about changing things a bit, and making something as delicious original brownies but not actually using a cocoa powder? Well, we made the best fruit brownies, by excluding cocoa and adding some fruits we had on hand, but still adding some chocolate on top, these are brownies after all :).

The process is very simple, it follows the instructions from the original recipes, with small changes. We included a photo below, for you to see how the “brownie” batter is looking before we transferred it in the oven for baking.

To make it look like brownie we melted chocolate and olive oil and cover the biscuit with it (as illustrated in the photo below).

Fruit Chocolate Brownies

INGREDIENTS

  • 10 eggs
  • 6 fresh plums (pitted)
  • 1 cup chopped walnuts
  • 3.5 oz (100 g) raisins
  • 1 banana (sliced)
  • 10+3 tablespoons sugar (3 for plums)
  • 3 tablespoons milk
  • 3 tablespoons all-purpose flour
  • 15 tablespoons ground walnuts
  • 1 1/2 teaspoon baking powder
  • 2.1 oz (60 g) unsalted butter (room temperature)
  • 3+1 tablespoons olive oil (1 for greasing the baking dish)
  • 7.1 oz (200 g) semi-sweet chocolate

INSTRUCTIONS

  • Preheat the oven to 350°F (180°C). Grease a 15”x 15” baking dish, and set aside.
  • Roughly chop and add them to a small bowl with 3 tablespoons of sugar. Stir everything until combined. Let it sit while you prepare the rest of the ingredients.
  • Separate egg yolks from egg whites (use a small dish for egg yolks and a large bowl for egg whites). Add 10 tablespoons of sugar in a bowl with egg whites and beat using an electric mixer for a few minutes until stiff peaks are formed. Add egg yolks and baking powder and mix on low speed until combined.
  • When done, add ground walnuts, milk, flour, and butter, and mix again on low speed. When the mixture is ready, add sliced banana, raisins, sugared plums, and chopped walnuts. Stir the mixture well until evenly combined, and transfer it into a baking dish.  
  • Bake for about 45 minutes (more or less depending on your oven). The cake is ready when the toothpick comes out clean. Let it cook for a couple of minutes.
  • Meanwhile, melt the chocolate and olive oil over a double boiler. Pour the chocolate over the cake. Use a spatula to spread evenly.
  • Let it cool for at least 20 minutes before serving. Enjoy your Fruit Brownies!
