Christmas is coming up soon, which means that the Christmas day dinners need to be planned. One casserole that is always on the table for Thanksgiving, Christmas or any other holiday dinner is a traditional broccoli and rice casserole. This casserole always makes an appearance at every holiday dinner along side the turkey and mashed potatoes. This broccoli casserole is creamy and cheesy with a crispy french fried onion topping. This is the perfect side casserole for your Christmas dinner.

Frozen broccoli is used for this, although you can use fresh broccoli if you prefer, you will just need to steam it before baking. I also used bagged minute rice in this casserole to make it easier. But any cooked rice or brown rice will work, you will need about 2 cups of cooked rice in the casserole. Mix the steamed broccoli and cooked rice together. Add salt, pepper, cream of mushroom soup, milk and 1/2 of the container of the french fried onions. Spread the broccoli mixture out into a greased baking dish. Top with shredded cheddar cheese and the remaining french fried onions. Bake until the cheese has melted and fried onions are crispy.

Cheesy Broccoli Rice Casserole

Ingredients
  

  • 1 ( 16 oz.) bag frozen broccoli
  • 1 bag minute rice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 ( 14 oz.) can cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 container french fried onions

Instructions
 

  • Preheat oven to 350 F. Cook broccoli according to package directions and place into a large bowl.
  • Cook rice according to package directions, mix with the broccoli. Add in salt, pepper, cream of mushroom soup, milk and 1/2 of the onions.
  • Spread the broccoli mixture out into a large greased baking dish. Top with shredded cheddar cheese and the remaining french fried onions. Bake for 25-30 minutes.
