Rakott Krumpli
A Hungarian casserole consisting of layered potatoes, boiled eggs, homemade paprika sausages, onions, and sour cream then topped with cheddar cheese and baked.

Ingredients
- SAUSAGE:
- 1 pound ground pork
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- CASSEROLE:
- 4 large eggs
- 2 pounds russet potatoes, peeled
- salt & pepper
- 1 TBSP olive oil
- 2 yellow onions, halved and thinly sliced
- 1 TBSP unsalted butter
- 1/2 cup sour cream
- 4 ounces sharp cheddar cheese, shredded

Directions
- Preheat the oven to 400°F.
- Make the sausage: In a large bowl mix together the SAUSAGE ingredients. For the mixture into 12 equal size balls. Flatten the balls into disk shapes and place on a baking sheet. Bake in the preheated oven for 12 minutes. Transfer the sausages to a paper towel lined plate and set aside.
- Make hard boiled eggs: Place the eggs in a saucepan and cover completely with water. Bring to a boil then place a lid on the pan and take off the heat. Let sit 10 minutes. Rinse eggs under cold water. Peel the eggs and slice each egg into 4 slices, set aside.
- Make the potatoes: Place the potatoes in a pot and cover completely with water. Add 1/2 tsp of salt to the water and bring to a boil over medium-high heat. Boil the potatoes until slightly tender but still firm, 20 to 25 minutes depending on the size of your potatoes. Drain the potatoes. Slice the potatoes into disks about 1/2-inch thick.
- Make the onions: Heat the oil in a skillet over medium heat. Add the onions to the pan and season with a little salt & pepper. Cook, stirring occasionally, until softened, about 10 minutes. Take off the heat and set aside.
- Assemble the casserole: Butter the inside of an 8x8 baking dish. Lay 1/3 of the sliced potatoes evenly in the bottom of the baking dish. Lay 1/2 the sliced eggs on top of the potatoes. Lay 1/2 the sausages on top of the eggs. Lay 1/2 the onion on top of the sausages. Spread 1/2 the sour cream on top of the onion. Now lay on 1/2 of the remaining potatoes, then the remaining eggs, then the remaining sausage, then the remaining onion, then the remaining sour cream, then the remaining potatoes. Sprinkle the top with the cheddar cheese.
- Bake uncovered in the 400°F oven until cheese is bubbly and beginning to brown, about 30 minutes.
