I tend to think about what recipes I want to create right before I fall asleep. Thinking about what delicious goodies I want to create in the kitchen keeps my mind racing right when I’m trying to turn it off. But lets be honest cookies are far from the worst thing that I could have on my mind before falling asleep! It only leads to dreams of the best cookies; the classic chocolate chip, oatmeal raisin, sugar, and of course these White Chocolate Chip Brownie Cookies.

I knew these had to be one of the first on my list of cookies to actually make because chocolate cookies with white chocolate chips have always been one of my favorite types of cookies! I remember always choosing and eating them along with my chicken sandwich during middle school lunch. The combination always was and still is so so good! And as I love to do for a lot of my favorites, I decided to make a healthier version of these cookies. I’m calling them brownie cookies because of their wonderful texture. As I was enjoying these warm cookies last night with a hot cup of tea, which by the way is definitely the ideal way to enjoy them, I was thinking about how they reminded me of a deliciously dense, fudgey, and chewy brownie. Thus the name was created.

What you need for these White Chocolate Chip Brownie Cookies!

  • almond butter
  • coconut oil
  • eggs
  • coconut sugar
  • vanilla extract
  • whole wheat pastry flour
  • cocoa powder
  • maple syrup
  • baking powder
  • white chocolate chips
  • salt

These cookies are made with some of my favorite ingredients to bake with! Almond butter is used in this recipe, which replaces the need for actual butter and makes the dough itself for these cookies dairy free. The cookies themselves are not completely dairy free because of the white chocolate chips used. The almond butter also adds a delicious nutty flavor that I love. Additionally, I used whole wheat pastry flour in these cookies as opposed to regular all purpose flour. Whole wheat pastry flour is one of my favorite flours to use in my baked goods, I use this kind. I prefer whole wheat pastry flour flour because of its nutritional value over white flour and because it makes for softer and lighter baked good than regular whole wheat flour does. Lastly, these cookies are sweetened with coconut sugar and maple syrup, my two tried and true favorite refined-sugar free sweeteners.

How to make these White Chocolate Chip Brownie Cookies!

  1. Set oven to 350 degrees.
  2. Combine almond butter, melted coconut oil, coconut sugar, egg, vanilla extract, and maple syrup until smooth.
  3. Add in the whole wheat pastry flower, cocoa powder, and baking powder. It might be a little hard to combine, but the dough will come together.
  4. Fold in the white chocolate chips as best as you can.
  5. Cool the dough in the refrigerator for around 10 minutes.
  6. Roll the dough into balls, place the balls on a greased or lined baking sheet, flatten the cookies, and top with the white chocolate chips that were not folded in or additional ones.
  7. Sprinkle each cookie with a little bit of salt.
  8. Bake for 8 minutes.
  9. Let cool and enjoy!

Description

These White Chocolate Chip Brownie Cookies are a healthier treat made with some of my favorite baking ingredients like almond butter, coconut sugar, and whole wheat pastry flour.  The perfect cookie to enjoy with a cold glass of milk or hot cup of tea!


Ingredients
