Introducing Chai Shortbread Cookies! Warming chai spices get wrapped up in buttery shortbread then dusted with powdered sugar.
So I really like these Chai Shortbread Cookies, but so far, everyone that has tried them loves them too. My husband, my mom, my niece, sister and a friend have all given their vote of approval. And not just with words but by the fact that they were all a gone in 48 hours.
Not only do they taste great, they also make the house smell better than any holiday scent themed candle ever could. These would be great for any holiday cookie swap plans you might have. Just sayin’.
For the chai element in these cookies I used the chai latte mix from Trader Joes. If you don’t have access to a Trader Joes or don’t want to use this mix for any reason you can also use actual chai tea (from a bag or loose leaf) ground up in the same amount the recipe calls for.
Ingredients for Chai Shortbread Cookies
Just six ingredients! (not including salt) 🙂
- Trader Joes Spicy Chai Tea Latte Mix or ground up ground chai tea (from a bag or loose leaf)
- unsalted butter
- brown sugar
- vanilla
- salt
- all-purpose flour
- powdered sugar
First, blend butter, sugar and chai until it’s a bit creamy. Then add flour + salt and blend until it looks like this.
Next, roll the dough into balls and place on a cookie sheet.
Bake until they are golden around the edges, about 30 minutes.
Finally, roll them in powdered sugar.

Ingredients
- 1 cup unsalted butter
- 1/2 cup brown sugar
- 1 tsp vanilla
- 1/2 tsp salt
- 2 cups all-purpose flour
- 2 tbsp chai tea or chai drink mix
- 2 cups powdered sugar
Instructions
- Preheat oven to 325F.
- Cut the (cold) butter into cubes and place in a large bowl. Use a pastry blender to combine the butter, brown sugar and vanilla until creamy.
- Add the flour, salt and chai and continue blending until a dough forms that you can press together with your hands.
- Use a 1 1/2 tbsp cookie scoop to measure enough dough for one cookie. Roll the dough in your hands to form a ball and place on a cookie sheet. Repeat until you fill the cookies sheet. Place each dough ball about 2 inches apart. Bake for 25 minutes.
- After removing the cookies from the oven, immediately prepare a station to roll the cookies in powdered sugar. Place the powder sugar in a bowl and use a spoon to carefully roll a few cookies at a time in the bowl to coat in powdered sugar and place on a wire rack to cool.
- You can do a final dusting of powdered sugar to cover any melted spots or imperfections.
