I love to try different mac and cheeses using different types of cheeses and seasonings. Colby jack cheese with ranch seasoning makes the perfect flavor combination. Creamy cheesy mac and cheese seasoned with ranch seasoning mix. The pasta is rich and creamy, with two types of cheeses. It tastes great for a side dish for any meal, or enjoy a bowl of it with a side salad for a main dish. The ranch seasoning is not too overpowering in the sauce, but it works well with the colby jack cheese.

The cheese sauce is made by melting butter. Minced garlic is cooked in the butter until it is fragrant. Flour and the ranch seasoning mix are added and cooked for a minute to brown. Add milk and both shredded colby jack and cheddar cheese. Let this mixture cook, while whisking constantly until both of the cheeses have melted and the sauce has thickened. Mix the sauce with the cooked pasta and serve.

Ingredients
  

  • 16 oz. elbow noodles
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 4 tablespoons all-purpose flour
  • 1 ( 5 oz.) packet ranch seasoning mix
  • 2 1/2 cups milk
  • 2 cups shredded colby jack cheese
  • 1 cup shredded cheddar cheese

Instructions
 

  • Cook pasta according to package directions, drain and place into a large bowl.
  • In a large saucepan over medium heat, melt butter. Cook minced garlic in it until fragrant. Add in flour and ranch seasoning mix and cook it for a minute to brown.
  • Pour in the milk and add in both of the cheeses. Continue to cook over medium heat, while whisking constantly until the cheeses have melted and the sauce has thickened.
  • Pour the sauce over the pasta and mix until fully combined.
