Burrata Lentil Salad

You might know I’m a bit obsessed with Burrata cheese and could probably have it every other day. However, I haven’t got a seasonal Burrata recipe, one that would warm your heart and soul and fill you up. And because I absolutely love lentils, this is what I came up with – Burrata, Lentils, Sun-dried Tomatoes, Crumbs and Homemade Pesto. 👌

Seriously guys, this salad is just divine. The ingredient works so well together. And the golden crumbs soaked in olive oil and pesto are just the best. I think I need to make it again very soon. 🤤 It is super rich so it could be served for a main. I actually feel quite full after.

Burrata Lentil Salad

What you need:

  • Burrata cheese
  • lentils (I used green, but brown work fine too)
  • sun-dried tomatoes
  • basil
  • olive oil
  • lemon
  • pine nuts
  • stale bread

Here’s how to make the Burrata Lentil Salad

I made two generous salads with the below ingredients.

Ingredients:

  • Burrata cheese, 2x125g
  • around 15 sun-dried tomatoes
  • 150g green lentils, cooked

For the Pesto:

  • around 15 basil leaves
  • 3tbsp olive oil
  • 1tbsp lemon juice
  • 30g pine nuts
  • a touch of grated Parmesan
  • salt to taste

For the dressing:

  • 2tbsp olive oil
  • 1tbsp lemon juice
  • salt to taste

For the crumbs:

  • 2 slices of stale bread
  • 1tbsp olive
  • 1tsp garlic powder
  • 1tsp dried thyme
  • 1tsp salt

Preparation:

  • To make the pesto, simply blitz the ingredients together
  • To make the crumbs, blitz the ingredients together, then gently fry them in a heated pan with olive oil for a few minutes until crispy and golden
  • Arrange the cooked lentil between two serving plates
  • Add the sun-dried tomatoes, pesto and Burrata cheese
  • Drizzle the dressing on top
