Honey Pumpkin Pancakes
Prep time: 10 min   Cook time: 10 min   Total: 20 min   Servings: 1-2

INGREDIENTS

  • 7-8 tablespoons rolled oats
  • 4 tablespoons pumpkin puree
  • 2 tablespoons honey
  • 1 egg
  • 2/3 teaspoon pumpkin spice
  • about 5.1 fl oz (150 ml) oat milk (use any nondairy milk)
  • 1 teaspoon coconut oil (for greasing a pan)

TOPPING Ingredients

  • honey

INSTRUCTIONS

  • To make a pancake batter add oat flour, pumpkin puree, egg, honey, pumpkin spice, and oat milk (about 2/3 of it) into a blender and blend on high until smooth, then add gradually the rest of the milk until you reach the desired consistency. In some cases we were adding more in some cases less milk, it depends on the other ingredients, we never stick to the measurements :).
  • Grease the pan with coconut oil. Heat it over medium to high heat. Pour the batter into the pan to form the pancake shape. You might need to use a spoon to flatten them because the batter is thick.
  • Cook each pancake for about 2 minutes, or until the bubbles start to form, then flip it over and cook for another minute.
  • Serve and eat the way you like. We topped them with some extra honey.

NOTES

  • We got 8 Pumpkin Pancakes from this mixture.
