Chewy peanut butter cookies filled with chocolate chips and Reese’s pieces candy are a chocolate and peanut butter lovers dream. Chocolate and peanut butter go together so well, so combining those two classic flavors in a chewy cookie are the perfect combination. Cookies are my favorite dessert to make during the holidays because they are so great to give as gifts to family and friends. After you prepare the cookie dough, you can even freeze the dough into cookie balls to bake at a later date.

Softened butter is mixed with peanut butter and both brown sugar and granulated sugar using a mixer until they are light and fluffy. Eggs and vanilla extract are added to the dough and mixed until it is smooth. Add the dry ingredients in three separate additions, beating after each addition until it is fully incorporated into the dough. Using a spatula, gently fold in both of the chocolate chips and the Reese’s pieces candy.

The dough needs to be refrigerated for at least one hour, because it helps keep the dough from spreading out too much when baking. After the cookie dough has chilled, roll the dough into balls using either your hands or a cookie scoop. You can also choose to place the cookie dough balls into freezer bags and freeze them until you are ready to bake. Place the cookie dough balls 2- inches apart onto ungreased cookie sheets and flatten each slightly with a fork. Bake until the cookies are golden browned.

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup butter, softened
  • 1 cup peanut butter
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup Reese's pieces

Instructions
 

  • In a medium bowl, whisk together flour, salt and baking soda. In another large bowl using either a hand or a stand mixer, beat softened butter with peanut butter and both sugars until light and fluffy.
  • Add in eggs and vanilla extract, beat until smooth. In three separate additions, add in flour mixture beating after each addition until fully incorporated.
  • Fold in chocolate chips and Reese's pieces. Cover and refrigerate for at least one hour.
  • Preheat oven to 350 F. Roll dough into balls and place 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
