Pumpkin and Feta Fritters

Pumpkin is definitely our favorite fruit! If you didn’t know, pumpkin is considered a fruit rather then vegetable. At this time of year, everything smells like pumpkin. There are tons of recipes using this amazing fruit, and so many yet to be discovered! Today, we are sharing with you our super delicious Pumpkin Feta Fritters.

This recipe is perfect for beginners. It doesn’t require any cooking skills. All you have to do is to finely chop all the ingredients and mix them together. So simple! 🙂 Taste is amazing, they are soft from the inside and crunchy from the outside. You’ll fall in love with them instantly, we promise you!

INGREDIENTS

  • 1 1/4 cup (125 g) fresh pumpkin
  • 2 eggs
  • 1/3 cup feta cheese
  • 2-3 fresh curly parsley
  • 1 small onion (chopped)
  • 9 tablespoons quinoa flour
  • salt and pepper to taste
  • olive oil for frying

INSTRUCTIONS

  • Cut the pumpkin into small cubes or use shredded pumpkin. Add, pumpkin, onion, and parsley into a food processor, and blend until finely chopped. This part is optional. You can do all this manually but the fritters won’t have a smooth texture. 
  • Transfer the mixture into a large bowl and add salt and pepper. Add one tablespoon of quinoa flour at a time, stirring constantly, until you get the desired texture. In our case, 8-9 tablespoons were enough. The mixture should not be too thick, otherwise, the fritters won’t be soft enough. 
  • Use a fork to mash feta cheese, and into the mixture and stir again.
  • Add olive oil into a frying pan, and heat on medium to high heat. Use a spoon to transfer the batter into the pan. *Hint* use spoon to flatten them a bit. Cook the fritters until they are golden brown, about 2-3 minutes then flip them and cook the other side for another 2 minutes. 
  • When they are done, transfer them on a paper towel. Let them cool for about 5 minutes. 
  • Serve and enjoy your Pumpkin Feta Fritters the way you like!
