This Creamy Cilantro Slaw is so easy and so delicious. Even better, it’s healthy! It’s especially healthy if you opt to make the Cilantro Lime Sauce with nonfat Greek yogurt instead of sour cream.
How to Make Cilantro Lime Coleslaw:
The first thing you’ll need to do is blend up a quick batch of my Cilantro Lime Sauce. You can find the easy recipe here.
Next, you’ll finely slice cabbage, radish, and cucumber. I like to use shredded cabbage from the grocery store. It’s sold as a base for coleslaw, and it’s perfect for this Cilantro Cabbage Slaw because it doesn’t come with dressing.
Toss it all together in a large bowl and mix. You can serve it as a side dish at a BBQ or use it as the base for some epic tacos.
If you’re going to serve this as a base for tacos, I’d recommend sticking with the cabbage, radish, and cucumbers. If you’re planning to serve this as a side dish, feel free to get creative with which vegetables you use! Carrots are a classic addition to coleslaw. Broccoli (including chopped up broccoli stems), kale, shredded Brussels sprouts, celery, and kohlrabi would all make great additions. Any vegetable that you enjoy raw and has a nice crunchy texture will work well.
Creamy Cilantro Slaw
Ingredients
- 1 batch Cilantro Lime Sauce
- 6 cups shredded cabbage
- 4 radish (thinly sliced)
- ¼ English cucumber (sliced into matchsticks)
- Salt to taste
- Pepper to taste
Instructions
In a large bowl, toss all ingredients to combine. Taste and add salt and pepper to taste.
