This is such an easy recipe. Honestly, you only need a handful of ingredients, a well-seasoned skillet, and the best homemade quesadilla seasoning. So, are you ready to learn how to make beef quesadillas? Let’s get started!
What You Need For This Recipe
For the best beef quesadillas put the ingredients below on your grocery shopping list. Have them ready when you start:
- Tortillas – we are making them using medium or big-size flour tortillas
- Ground beef – the main ingredient in this recipe
- Onion – finely dice the onion
- Sweet pepper – use red sweet bell pepper and dice it
- Mushrooms – slice the mushrooms
- Sweet corn – you can use canned or frozen sweet corn
- Tomato puree – to give the beef a hint of tomato
- Shredded cheese (Gouda or Mozzarella)
- Seasoning – to season we are using quesadilla seasoning
- Olive oil – to cook all the ingredients in

How To Make Beef Quesadillas
- Start with finely chopping the onion and sweet pepper. Thinly slice the mushrooms. Preheat a cast-iron skillet to medium-high and add the olive oil.
- Add the onion and sweet red pepper. Stir and move the ingredients through the skillet until soft and translucent. Then add the ground beef and stir to combine with the soft vegetables.
- Brown the beef before you add the quesadilla seasoning. Stir well then add the tomato paste and water. Simmer for 5 minutes then set aside.
- Take a flour tortillas and sprinkle with shredded cheese then a tablespoon of sweet corn. Then fill half of the tortilla with the ground beef mix.
- Another tablespoon with corn and top it off with a good helping of shredded cheese. Fold the quesadilla and put it in a warm skillet.
- You do not need any oil or butter. Warm the skillet to medium-high and let the tortilla go brown turn and bake the other side of the tortilla.
- Take out of the skillet and cut in half or wedges. Repeat for the other tortillas.
Beef Quesadillas Recipe
If you have never tried quesadillas, you really should, especially this recipe. It is great to serve for lunch or dinner. No oil is needed to turn soft tortillas into crispy quesadillas that are filled with juicy beef and soft vegetables.
I’m confident that when you try this quesadilla recipe you will never need another. Oh, and what you do need is cheese, lots and lots of cheese that will melt once your quesadillas are in the skillet.
Everything tastes better with melted cheese and this recipe will show you why. You can either fold a quesadilla before baking or you can stack two tortillas with filling and bake them like a pancake.
I used ground beef but feel to substitute for ground chicken or ground turkey. Use this amazing quesadilla seasoning and it will make your quesadilla taste even better.

- Breakfast quesadillas – just like breakfast burritos you can easily turn eggs, bacon, and veggies into breakfast quesadillas

How To Store Beef Quesadillas
If you made a big batch of beef quesadillas or you have leftovers you have several ways to store them.
If you want to store them, do not cut them so no filling will fall out. In all cases let them cool completely before storing them:
- Refrigerator – When you have leftovers store the quesadillas in an airtight food container for up to 2 days
- Freezer – if you want to keep them longer you can store them in the freezer. Store the beef quesadillas in a freezer-friendly food container and store them for up to 3 months
How To Reheat Beef Quesadillas
You have several ways to reheat these beef quesadillas.
- Cast iron skillet – you can reheat them in a cast-iron skillet. Heat the skillet to medium heat then add the whole quesadilla and warm. Flip to warm the other side as well. Take out of the pan and cut into wedges
- Oven – preheat the oven to 350℉/175℃ wrap the quesadillas in aluminum foil to keep the tortilla soft and heat for 5 minutes or until warm. Take out of the oven and cut into triangles
- Air Fryer – you can also reheat them in an Air Fryer. Preheat the Air Fryer to 350℉/175℃ for 3 minutes. Then wrap the quesadilla in tin foil and warm for 3 minutes or until warm. Take the quesadillas out of the Air Fryer and cut them into wedges
What Is The Best Cheese For Quesadillas?
There are many different kinds of cheeses that you can use with your quesadillas. A rule of thumb is to not use aged cheese but young cheese with lots of moisture.
