Now that the weather is colder, I love to make soup for a warm comforting dinner. The crock-pot makes it so quick and easy to make this creamy potato soup. There is no need to cook the potatoes before they go into the crock-pot, because the crock-pot does all of the work. Serve this delicious creamy soup with some bread for a hearty winter meal.

Peeled and diced russet potatoes are added into a crock-pot along with diced celery and red onion. Cover the vegetables with chicken broth and sprinkle with seasonings. Cover the crock-pot with the lid and cook it on low heat for 6-8 hours, or cook it on high heat for 3-4 hours. About an hour before you are ready to serve, make a sauce in a saucepan by melting butter over medium heat. Add in flour and cook it for a minute to brown. Whisk in milk and sour cream, let the sauce cook over medium heat while whisking constantly until it is thickened. Pour the sauce into the soup and let it cook for another 30 minutes, until it is thickened. Blend the soup with an immersion blender or blend it in batches until the soup is smooth and creamy.

Ingredients
  

  • 2 pounds russet potatoes, peeled and diced
  • 2 stalks celery, diced
  • 1/2 cup diced red onion
  • 4 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 cup sour cream

Instructions
 

  • Peel and dice potatoes into 1-inch cubes and place them into a large crock-pot. Add in diced celery and onion. Pour in chicken broth, cover crock-pot with lid and cook on low heat for 6 hours, or on high heat for 3-4 hours.
  • In a medium saucepan over medium heat, melt butter. Add in flour and cook for a minute to brown. Whisk in milk and sour cream, let cook over medium heat while whisking constantly until sauce has thickened.
  • Pour the sauce into the crock-pot, cover and let cook for another 30 minutes. Blend soup with an immersion blender or blend soup in batches until smooth.
