Beef Stroganoff

This recipe is hearty and fun-to-make, and is the perfect meal for any fall or winter dinner.

Ingredients

  

  • 1.5 lb steak roughly cut into slices
  • cup gherkin pickles sliced
  • 1 large sweet onion sliced
  • 1 bunch parsley
  • 16 oz cremini mushrooms sliced
  • 4 cloves garlic minced
  • 2 tsp smoked paprika
  • ¼ cup heavy cream
  • egg noodles

Instructions

 

  • Cook egg noodles according to package instructions. Coat steak slices with salt, pepper, and paprika. Bring a large skillet with some oil to medium-high heat and toss in the steak, cooking to your desired doneness.
  • Meanwhile, saute mushrooms in another pan on medium heat until just starting to turn golden. Add the onion, garlic, pickles and sliced parsley stems to this pan and keep cooking for another 5-10 minutes.
  • At this point, add the vegetables to the steak, add heavy cream and half of chopped parsley leaves, bring heat down to low, and simmer for another 5 minutes.
  • Serve atop egg noodles and sprinkle some remaining chopped parsley leaves over top.

Notes

This meal pairs well with a stout or a red wine.
